Homemade Ciabatta Bread & Mozzarella Grilled Sandwich with Kamut Flour

Come make this with me! If you don't have Kamut flour this time, just make it with what you have. Let's bake!
After much experimenting, I'm finally ready to post my Kamut Ciabatta Bread 🍞
This bread is SO worth it 🙌🏻
It was incredible as a sandwich with my fresh cows butter and making fresh mozzarella 💥🧈😋
FN Ciabatta Bread
1. Prepare the Biga First
Stir these ingredients together in a wick jar or a pint jar both with lids.
3/4 cup water (room temperature)
1/4 teaspoon active dry yeast
1 1/2 cups White Kamut Flour or 2 cups all purpose
Cover and let ferment in a 72 degree kitchen for 6-24 hours.
2. Autolyse
When your Biga has fermented and ready to continue with the bread mix: In the bowl of your electric mixer with a dough hook measure 3/4 cup water (at room temperature) and 1 3/4 cups white Kamut flour or 2 all purpose until well combined. Cover with a towel and let sit for 30 minutes.
3. Final Mix
After 30 minutes to the Autolyse add:
2 3/4 Tablespoons water ( room temperature)
2 teaspoons yeast
1 3/4 French gray coarse salt
All the Biga that has fermented
Add all of this to the Autolyse and mix
Mix on low for 3 minutes, increase speed and mix for 5 more minutes.
4. Transfer the mixed dough to an oiled large bowl. Strengthen the dough by lifting the dough doing the stretch and fold. Let sit 30 minutes. Then do lamenting. Not stretch and fold. After that return to bowl for 1 hour.
Gently release the dough from the bowl onto a well floured counter.
Form into a square slab.
Cut parchment paper enough for 2 slabs and flour well. Cut the dough into 2 equal rectangle’s and place side by side on the parchment paper. Cover and proof for 30 minutes.
5. BAKING
Preheat oven to 500F - preheat baking stone on the middle rack and a cast iron pan in the bottom of my oven.
Boil water.
Slide ciabatta onto baking steel and pour boiling water into cast iron pan in the oven. Cover loaves with turkey pan, decrease heat to 480F and bake for 12 min. Remove foil pan and continue to bake for 13-15 minutes until crust is a deep golden brown.
