I'm a chef and if you lightly toast the coconut before hand in the oven, then let it cool, then blend it the flavor is even more intense and yummy!! Enjoy!!

Do not process coconut in heat that way it will change it's molecular structure.

Coconut oil is so stable that it can be left in a cool pantry for months. I made that video at least 6 months ago and I've left that same jar in my pantry (as an experiment to see how long it would last) that entire time. I checked it today (tasted it too) and it's perfect!

I don't have a Vita Mix, so I made this in my coffee grinder and it turned out just fine. You have to do small batches if you want a large amount. But you can make enough for your mornings pancakes or toast. Simple fill the grinder up and pulse. Takes 1-3 minutes. Yum!

Great suggestion! Yes, feel free to add some coconut oil if it is not turning to butter for you. This may always be the case when using a food processor, as the lower speed doesn't always expel the oil from the product.

I've been told that you can. It takes a lot longer, like 10 minutes or more. I might try to toast it a bit first to help the oils release, and add a bit of coconut oil if it doesn't start breaking down into butter. I've also made it in a Nutri Bullet (with added coconut oil).

It's always good to get it from a source that you trust and that turns over it's products quickly (so not a little co-op that's had it on the shelves for 3 years). That being said, coconut oil is one of the most stable oils out there and does not easily go rancid.

Debbie- You know, I think the dry mix containers now are shorter, However, both of mine look exactly alike and are the same size. I do show in the video that I am using the Dry Container, as it's marked on the Vitamix container, and since it has a faster blade it would not work as well with the wet container. Thanks for helping to solve this riddle!

Thank you for your kind comment. I've had others ask me to do a video on how to make coconut oil. When I figure it out I'll let you all know. Unfortunately it's like asking how to make olive oil from olives. I think it takes special equipment that most of us would not have access to.

HealthNutNation its super easy, I did it once but in a small quantity and it turned out great. You just shred the coconut meat and then you squeeze the juice out of it by using muslin bags and then strain the juice. Once that’s done, you pour the mixture onto skillet until you get your desired paste consistency and then you can store it in the fridge or in a cold dry place. I advise you to do your own version and see what you come up with. Hope that helps.

Thank you for this great tutorial. I have found getting the nut butters cleaned out of the bottom of the blender a bit of a task too. Don't know if anyone mentioned this, but I use the blender with the bits of butter in the bottom and throw in the ingredients to make a smoothie and don't waste a bit that way.

I have a blender, not a vita mix, but, I am going to try this. I never heard of this before today. I can add a few drops of liquid stevia if I want it to be sweeter. It looks and sounds amazing.

On one hand i found this very helpful, it answered my question exactly. On the other hand, I'm ashamed because i laughed every time you said nut butter. Alas, the 12 year old in me has triumphed again...the force is strong with him.

The Vitamix tamper is not long enough to reach the blade and tamping it down helps to keep it all running through and have a consistent product at the end. I may have stopped and scraped it down once with a rubber scraper/spatula, but the Vitamix is so powerful that it doesn't need much help.

Sakura Mikan- Yes, it must be dried before using for this recipe. You can dry it by shredding it and then placing the shredded meat in a dehydrator, the sun (if you live in a hot climate), or in an oven at 200 degrees Fahrenheit.

Thanks so much! I make homemade coconut milk and usually toss the leftover coconut into the compost, today after watching your video I made coconut butter with it. I did have to add just a 1/2 tbs of melted coconut oil.

VERY CRISP CONSISTENT AND CLEAR CONCEPT, VIDEOMAKING AND the coconut butter of course....I have shared it into my facebook page that contains the uses of coconut oil and prodcuts for all diseases and treatments. All health tips highlight coconut oil...not the market oils, branded ones...but the vco original cold pressed and this butter is heavenly for kids and adults...NO CHOLESTEROL!!

I actually tried blending 8.7 oz of plain dried, shredded coconut but it wouldn't...liquefy into a butter. So I had to add add ~4 oz of virgin coconut oil. The end result is frigging awesome. It should be kept at room temperature. If you put it in the fridge, it gets hard. To the point of becoming a coconut "wax" but if you put some heat in it like the blender does, it becomes very soft and buttery.

I also got it to work they way she did it in the video. The trick is to use freshly opened bags of coconut. The kind I tried it with before had been opened and put in my fridge for about a month. It must have dried out.

In one of your comments you mentioned that you made this in a nutribullet, but that you added coconut oil. Why did you have to add the oil and how much did you have to add? I just purchased a nutribullet today, so I'm curious. Thank you!

I have had the same trouble. I think what you should do is add some coconut oil, but I haven't tried this yet and will be trying it in a day or two. Supposedly, dessicated coconut is even drier than regular dried coconut, so adding some sort of moisture/liquid will help with the process (I think)!

OMiGosh, this looks so easy! I only just discovered raw coconut butter and I love it on toast. I found an unsweetened version of coconut flakes at Wal-Mart on their baking aisle. Would that be okay to use? I'm hoping to make my own since this can be "pricey" at the store. Thanks for making this video and I just subscribed to your channel! :)

This can also be done in a good food processor, especially if you want to make larger amounts using dried organic coconut flakes.

This coconut butter looks amazing!!!! Unfortunately I am living in Australia at the moment and everything electronic costs twice as much than back home. I hope one day I can afford a vita-mix they are so, so versatile!

Eating coconut butter regularly will give you beautiful skin and hair. It can also be applied to the hair and let it rest for about 30 minutes before washing the hair with hot water. Doing this once a week will give you long and healthy shining hair. If you want longer eyelashes or thicker eyebrows, apply every night and wash next morning.. 100% true !!!.

Azure Standard now services the entire west coast and Alaska. That's where I get mine. Just look them up online. They may serve as far east as Denver but I'm not sure.

Okay, I watched the episode and read the recipe. My only problem is that Alton uses milk in the making of his coconut milk and coconut cream. Since most people using coconut milk do so b/c they are dairy free, I'm thinking that maybe just water is what is typically used in the canned stuff...?? Thanks for this. I'm going to start experimenting!

nothing against a vita mix but i make soap,home made powder laundry detergent and more and its hard on a blender for sure-i burned up a few lol...ive since invested in a ninja-OMG!! what a dream! the blaes run almost to the top of the container and it comes out so you can easily remove any packed in processed detergent etc.not to mention its got the power to keep up w/all my rough wear and tear on it!!! cool video ty for sharing!

Hi Daniel, It must be dried first as far as I know. You could simply try roasting it in the oven like you would other nuts and then give it a try (cut or shave into small pieces first). It will take longer in the food processor but I am told it can be done. If not, you can always watch my homemade coconut yogurt video and make that! Let me know how it turns out!

I used homemade cream Shea Butter and cocoa butter with essential oils Perfect on my skin that’s all I use now and the difference is clear on my body and skin !

I might try this with fresh mature coconut rather than dried. The problem with dried coconut is that sometimes sulfites are added or even sugar. It might even be dried with high heat and I am interested in preserving enzymes. Question: have you used that dry carafe for making almond butter? I am interested in maybe getting the dry container. I have the wet one but of course you can't use that for grinding stuff. Thanks for this! It's amazing that the flakes got so oily.

In the fridge, it lasts months. In the pantry, it should last at least a month. Coconut is a very stable fat, so it doesn't go bad quickly.
