I have always wanted to know how to do this! Corned beef is one of my favorite foods but I can only get it around St. Patty's day where I live. No one around here knows how to do it. Seems to be a lost art in this area.

Howdy !!! I DID this, after watching this video. Must say, I held my breath in anticipation at the results (mostly because I chose to sit that big ole pot full of beef and salted, seasoned water on the counter, not the fridge for the curing time). But I kept reminding myself that Caroline knows what she's doing and THIS is one of the methods people have been preserving meat for eons. First time big successes like this are such confidence builders !!! And Voila !! It turned out amazing, tender and delicious !!!! wooo hooooo !!!!! can't thank you enough, sweet lady !!!

I like warming my spices in a dry pan for a few minutes before adding to the brine. It helps release the oils (and makes the house smell FANTASTIC!). Also, you NEED some juniper berries!! :)

I've been doing this for a couple yrs, I found if you want that lovely pink color without the chemicals use a good non GMO beet powder. It helps make it visually more appealing after brining. Great video!

This turned out very good!! I let it go for four days then cooked it slow in dutch oven with carrots and potatoes, cooked some cabbage separately and added last minute. I will do it again in future and I will do a venison one if given the opportunity! Thanks so much for sharing this :)

I've been corning my own beef, for a number of years now. I know you don't want to use certain chemicals but if you don't use #1 curing salt/prague powder your meat will not keep that nice pink color when cooked. I also corn venison roasts(you wouldn't believe how delicious it is), pork roasts and loins which are absolutely delicious too, you really should try corning different kinds of meat and roasts. You'll be pleasantly surprised at how it transforms ordinary roasts into delights your family will crave. My parents and brothers are always dropping hints how they can't wait for my next batch. I always tell them ahead of time when I'm going to start corning and to bring over any roasts they want corned. Then after all they have to do is cook it or wrap and freeze it for another time. Personally I corn my stuff for 12-14 days. Tip: I bundle and tie my spices up in cheesecloth to keep all the spices and seeds contained. this keeps the brine neat without having all the spices from getting all over the meat needing to be rinsed off. And BTW, forget the slow cooker/crockpot cooking it all day. 90 minutes in a pressure cooker...DONE.

In Germany we call it " beize" around the middle 1800 the people around the world did this all ready and it's THE best way .if you do this with vinegar you will have a good " Sauerbraten"...if you like I will send the original Rezept. I always had simmered corned beef all my life until a couple years ago. I tried roasting it with a mustard brown sugar glaze on top wrapped in heavy foil. Totally the best way to make it

Never use salt with corned beef , it is usually rinsed under running water before cooking because of excessive salt in the processing. Yes I use brown sugar and course mustard mixed roughly together then pat it heavily all over the top before baking

I use a crockpot to cook it. I cover the meat with water (not chlorinated tap water), just barely enough to cover the meat. Add a couple tablespoons of pickling spice. Then after it’s cooked I remove the meat and set aside to cool. It’s much easier to cut when cooled. I add my whole potatoes and carrots, & quartered cabbage to the “broth” and cook until done. Discard the liquid. OMG people! It is so so so good. 🌹

Great video! Every year I say I'm going to make our own corned beef, and this is the year I decided to do it. It takes some advance planning because we order our beef in the fall, so I wanted to make sure we had a good sized brisket in our beef order! And then of course remembering to defrost it ahead of time so I can get a good week of it sitting in the brine. Today is cooking day, and I'm doing it in the crock pot. I love your tip of adding some of the brine for flavour.

Every year while our newly harvested deer are being processed I can the steaks and burger from the prior year for super fast meals on busy days or camping trips. The roasts, usually just one or two, are always a problem because it slows everything down removing it from the bone without getting much meat. I will be doing this with those roasts, thank you for the inspiration.

Yup, potassium nitrate, not the pink curing salt they sell in stores that have sodium nitrite and sodium nitrate for long cures. The only reason saltpeter isn't used today is because it is a mined mineral, it not always the same purity/strength. So they switched to a chemical they could maintain a set purity. The pink salt she used is just mineral salt and not pink curing salt, but brining to cure is ancient. Thought I'd add that encase some readers think I'm stating she was using the "pink curing salt", it was pink, but not the Prague Powder #1 or #2. Meat looks nice and red in it's packages because it's sealed in carbon monoxide.

This is salt beef. Corned beef is preserved with saltpeter. I have seen instances where celery powder is used as a stand in for salt Peter, but curing salt (pink salt) is what makes corned beef pink.

Oh ya, I'm a little crazy, and its not that I can't cook, I just can't follow instructions very well. He puts up with a lot from me but when he's home he's king. Sometimes he doesn't want to leave. I am so grateful that you are demonstrating on camera how to do the process. The end product would be nice to see but the process is the main concern for me. So much of what you share we already do. USDA does recommend the salt peter or pink salt #1 in this case. For 5 pounds I use 1 tsp. I Put it in there to preserve the color and the meat. It prevents botulism. Look up the recommendation and do what you think best. Thanks for this great video!

We have a food grade bucket that we use to brine turkeys and several chickens at once. Works great. We use it to store our meat grinder to save space. I am looking forward to trying this. I love corned beef, but the store ones make me ill. I could eat it as a child and teenager then one year the flavor changed and it made me ill. I’m hoping homemade works. When I cook it I rinse my meat off, place it on a layer of sliced onions, add in fresh spices and 1/2 a can of stout then cover with water. I don’t use the brine for the veg, preferring the clean taste of just boiled and steamed ones fresh from the garden. Add a bit of grainy mustard for the meat and butter for the veg and I’m a very happy lady..

No one responded?! I canned some store-bought corned beef today, I put two in a pot with about a quart of water and let it simmer covered for about an hour to the point of it "just" being cooked. (I didn't want it too tender at this point because I didn't want to to shred) I flipped them a few times, smelled amazing. I let it all sit there in it's own yumminess while it cooled enough to handle, I cut it into little cubes, packed into a jar, and used the water I cooked it in to bring it up to the headspace and fill air gaps. I poked at it with a popsicle stick to get the rest of the bubbles out, screwed the lids on, and proceeded!!! I can't wait to eat it! Hope this helps? ....two years later..

Caroline, I have learned so much from you! Thank you and your family so much for the informative videos you make. I have a corned beef in the fridge following your recipe right now. Questions: Can I use chuck roast with a bone or must it be boneless? This is day 3 and the meat is discoloring a bit. is this normal? I chilled the brine in the fridge for hours to make sure my meat and brine were well chilled before putting it all to marinate. The meat is well under the brine. Should I be worried?
