I've just prepped this and put it in the fridge. I couldn't believe how difficult it was for me to just find salt. Pure, on it's own salt with no additives and anti-caking agents. Looking forwards to it, and making a bit of your corned beef pie!

Bread is very easy using John's recipes. I have made a lot of them. Just flour, water, yeast, a little sugar to feed the yeast, salt and oil. If you want to try Sour Dough, John's starter is very active and comes with full instructions.

Hi John, Well now I know how to make corned beef, thank you very much!! Without knowing anything about if I thought it would have some corn in it, but a quick look tells me that it refers to corns of salt!! In fact I can't seem to distinguish it from Salt Beef, which was a favourite of my Dads, I guess pulling it into strands and grinding it slightly perhaps changes its consistency (and made it palitible for a fussy lad!!). I always used to enjoy doing corned beef hash. It look great, well done!! All the best!!

@matthewanipen2418 I'm not an expert - but based on my experience making sausages and home-cured bacon, you can use standard salt. However, the meat will be greyer as there will not be the nitrates and nitrites from the curing salt to keep the meat really pink.

Nice one John. The corned beef looks top quality. I use the same method and quantities to dry cure my own bacon. I can't buy bacon that hasn't been artificially smoked or flavoured where I live. I love corned dog (as my dad used to call it), and will give it a try.

Hi John. Another nice little nod back to when I was Lad growing up in Yorkshire. My dad was a butcher and he cured all his own bacon at home and we made corned beef once or twice a year but he use cure No1 not No2!!! As I understand it, cure No2 is used for long curing and air drying for products that are eaten without being cooked. Cure No 1 is used for bacon and the like when the product is to be eaten cooked. Hope you don’t mind me asking if you could clear that up for me??

@ Thanks John. I think I might be getting a little confused as I only remember him curing in brine, hams, tongues’ and slabs of beef. I don't know how common Reuben sandwiches are in Britain, but it is the highest and best use of corned beef. Corned beef, sauerkraut, Russian dressing, and Swiss cheese all on good rye bread (and contrary to popular opinion is is possible to find good bread in the US, although not all over the place like in Germany). Probably the greatest single contribution from Jewish-Americans to our national cuisine, although ironically because it mixes meat and dairy in a single dish it isn't kosher.

I prefer John's recipe as it uses actual meat. In the factories they get meat and tongues, udders, penises, noses and all the other stuff that you don't want to know about, into the mix. If it wasn't for the rubbish they put in, I would eat commercial tinned beef.... but I know of no brands that use meat only.

Hi John My friend you won't believe my comment but I will tell you any way. I visited my Grandmother in Seahouses today in Northumberland and had an amazing day. She is 95 but 100% with it and i kid you not STILL drives. After a nice meal in the town we were talking about food, to which she made us laugh by saying she loved proper Salmon not that new stuff (she meant tinned not fresh) Well she then moved on to corned beef which she called bully beef (not sure what that is) She then said why don't they make it fresh anymore like i did in the war. John, this recipe i think will make her day to which im going to make it and take her some next week, Thanks so much, Chris.

@JohnKirkwoodProFoodHomemade I've been making corned beef all my natural life on and off. One thing I use instead of kosher salt is pickling and canning salt. Since you used weight instead of volume measurements it will all add up to the same amount whichever you use. I have insta cute #1 and insta cute #2. I'm a little surprised you used the #2 instead of the #1. Not a lot of difference and it won't hurt. #2 is for long curing like dry salami and so on. I use it to make pancetta and bacon. Your powder is the same stuff. My corned beef has pickling spices in it as well. I also don't have an insta pot. I have regular old school pressure cookers. If you're still reading i might suggest letting the insta pot cool down and not release the pressure. Releasing the pressure can dry out the meat somewhat. This is due to the pressure difference in and outside the meat.

This would last a while in the fridge if stored correctly and handled clean I would assume. 2-3 weeks perhaps if you don't eat it all beforehand 😉And yes, it does freeze well. I had an open can once and decided to freeze the rest wrapped up to have it another time. It became a bit more crumbly but was still fine to eat.

Hi John, I love your no-nonsense recipes. Here is an idea for further recipes. Do you have any simple recipes for meat dish or meat on its own that does not need refrigeration? (maybe like this corn beef?). We cruise extensively on our sailboat here in the PNW and after a few days, the fresh meet runs out! I do make "pemmican" but it is more of a emergency type of food than an actual enjoyable meal! Cheers, a.
