I was thinking the same thing. I've missed some time being busy and checking in seeing Mary kicking butt, making soup, feeding birds, unloading groceries , getting something that makes Peter happy and best of all her dream in the past of contributing more to their little family is just truly amazing and cool to see. It was super fun to watch her cook and I know she's quite creative by nature so super looking forward to what she gets up to (including egg noodles) while she's got a day's worth of energy!! Woohoo! Go Mary go!

I remember making eggnoodls in big batches with my grandma. We rolled out the dough very thinly on very large, round wooden boards and cut it into long strips that were as wide as the noodles should be long. When these strips had dried a bit, we stacked them and cut them into noodles with a sharp knife. when the noodles were really dry, my grandma packed them in airtight boxesand glasses and kept them in her pantry for later use. You are inspiring me to do the same on my own.

Mary, the fact that you can cook things like noodles from scratch is a real testament to you Vertex can 🤗. What an awesome feeling to be able to make things for others who are in need or struggling. Such a good feeling after all the blessings you have received when you were very sick. You two are the sweetest couple. ❤️❤️

Mary best way to make egg noodles is the amish way. Make a mound of flour on your surface, make a hole in the middle. Kinda like a volcano, and put your eggs in the hole. Work your flour and eggs together with your fingers until you have a dough. Roll out and cut to your preferred size.

I do remember my mom making homemade noodles, I think she dried them out before adding them to the soup. I remember seeing the dough drying out in front of our old fashion space heater. She rolled it pretty thin, just had the whole piece of thin dough drying, then cut the dry dough into noodles, then added them to the soup.

If you're truly wanting to learn how to make noodles/pasta at home/from scratch; purchase a Pasta Machine/Press. It'll make the whole process much easier. Also, buy some pasta rollers, or use a Pizza Roller to cut more precise shapes etc.. Stock vs Broth Stock is made utilizing the bones of an animal (beef/chicken/fish/shrimp/lobster) Broth is made by utilizing the Meat of an animal. When preparing a Stock, in order to make sure it's clear/not cloudy is to make sure it doesn't get into a Hard/Rapid Boil. Bringing a Stock/Broth to a Simmer. and leave it be. Stir, and skim any foam/scum that rises to the top. Boiling causes the cloudiness in a Stock. Boiling of a Stock/Broth causes agitation to the meat proteins (collagen in bones) which promotes cloudiness in the end product. Mire Poix vs The Holy Trinity (differences/flavors/Utilization) Carrots, Celery, and Onion or (Mire Poix) in French Cuisine the use of these aromatic root vegetables is paramount for the simple building blocks of flavor in most French cuisine. When making Stocks/Broths you don't have t take as much time dicing/cutting up the Mire Poix as it's only used for flavor, then thrown away. Rough chopping of the aromatic vegetables is alright in these applications. If you ever find/buy fresh Italian or even Curly Parsley, use the Stems for flavor in the Stock, along with Whole Black Peppercorns (about a Tablespoon or so). All of these will again be strained/tossed before final use in cooking. Cajun immigrants adapted this trio, but omitted Celery for Green Pepper. This is called "The Holy Trinity" in Cajun Cooking. It's used as flavor building blocks in Gumbos, Etouffees, and other classically prepared Cajun dishes. Just some random/culinary tidbits for you guys! Keep on cooking!! Practice makes perfect! God Bless

It looks like you did a great job on your noodles and soup. I was taught to make my noodles like that years ago when I was a young girl. The only thing my grandmother taught me was to put 1 less egg and add hot broth from the soup pot and add a tiny bit of poultry seasoning like a pinch or two and salt and pepper. It seems like no matter how thin you make them they plump up. My kids are grown adults like the two of you and if I make chicken soup and use store bought noodles they don't want any. They want the homemade noodles. Your soup looked wonderful. Have a Wonderful Day!!🌞🌞

I don't live in an apartment where I can really do much cooking yet (hype to move in September!) But my grandma used to make noodles every year for Thanksgiving! I believe she would make them way in advance and store them in the freezer for a few weeks before cooking them, not only to save on the stress of Thanksgiving cooking, but also because it helped the noodles taste better (I'm not sure exactly how, though...maybe they stayed firmer?) But I always ate more noodles and gravy than anything else at Thanksgiving!

If you refrigerate cooked steel cut oats, they turn into a Slab 'O Oats, so just follow the recipe on the package. Then when you want to serve some, simply hack off a chunk and reheat with some added liquid of choice to soften it up, along with your preferred add-ins. It's a real time saver because steel cut oats take a while to cook.

Yes you are correct to cut thinner. But also try cooking them outside your broth in salted water first then rinse and add just like you would dried noodles. In addition, with left over soup add cream of chicken or mushroom soup and some sour cream and thicken it. Then add make this egg noodle dough. But do not roll out. Nice tight dough mixture that you just pull a hunk out with a butter knife and drop into boiling water. We call it lacey dumplings. Then add these to your thickened soup. Nice reincarnation to regular chicken soup.
