How to make good old-fashioned ginger beer of your own using natural fermentation - such a fun and easy process and it is THE most refreshing and delicious drink from summer! The traditional step-by-step method is also written out here in the description, and read below for extra notes on sugar/alcohol/etc!
Ginger beer recipe and method: Day 0 is establishing the bug, Days 1 - 6 is feeding it, and Day 7 is bottling and restarting the bug.
Day 0: add 2 cups of water, a few raisins and 2 teaspoons of sugar to a clean glass jar, and stir. Cover, and sit somewhere at room temperature, out of direct sunlight.
Day 1: feed it 2 teaspoons of sugar and 2 teaspoons of ground ginger
Day 2: feed it 2 teaspoons of sugar
Day 3: feed it 2 teaspoons of sugar and 2 teaspoons of ground ginger
Day 4: feed it 2 teaspoons of sugar
Day 5: feed it 2 teaspoons of sugar and 2 teaspoons of ground ginger
Day 6: feed it 2 teaspoons of sugar
Day 7 [one time only, the first time you reach Day 7]: drain off and discard the liquid, discard half the sediment, and add another 2 cups of water, another 2 teaspoons of sugar, stir in the retained sediment and then tomorrow you go back to Day 1.
Day 7 [normal, from every Day 7 except the very first]: dissolve 2 cups of sugar with 2 cups of boiling water in a large clean pot. Once dissolved, add 12 cups of cool water and then stir in the strained juice of 2 lemons. Strain your fermented ginger bug liquid into the mix, capturing and setting aside the sediment. Give the liquid all another good stir.
Wash your bottles well in hot soapy water, and rinse thoroughly. Bottle, adding a couple of raisins to each bottle if you wish. Fill the bottles a bit short of full, seal, and place somewhere safe at room temperature out of direct sunlight. These will be ready to be refrigerated and enjoyed in another week’s time. You do not continue to feed the bottled beer over this final week, but you may wish to monitor the pressure building up, and relieve some of it throughout the week, particularly as you become accustomed to the strength of your individual bug.
Still on Day 7, restart your bug: combining half the sediment with another two cups of water and another 2 teaspoons of sugar, cover and tomorrow the cycle begins again at Day 1.

🌿 Ginger - as mentioned in the video, you could use freshly grated-ginger instead, but you will likely find a different method better suited to that.
🧂 Sugar - feeding it with plain white sugar is good, and your bug is just eating it, but those two cups of sugar added on bottling day could be a fancier type (rapadura, coconut sugar): just keep an eye on the effect it has on the strength of your bottled brew!
🥄 Stirring - some people don’t worry about stirring when feeding the bug, and if you do stir, try to avoid getting too much powder onto the walls of the jar.
🍻 Alcohol - this would be considered a 'non-alcoholic' beverage here in New Zealand, with just minimal traces being produced as part of the natural fermentation, a traditional part of our culture that has been enjoyed for generations! You could try making an alcoholic version by using the right yeasts, adding more sugar, and likely changing the brewing process [find a different method to follow!] - but you wouldn't want to go confusing the two! If your local culture or religion is strict about even negligible levels of alcohol, you might like to do more research on the topic before making your own, eg: happybellyfish.com/2020/09/02... and could always use a hydrometer/alcoholometer if concerned.
🎯 Recipe - I’ve made different ginger beers over the years, and this has quickly become my favourite method. I like how few ingredients there are, that it does not rely on artificial carbonation, or special “ginger beer” yeasts or anything like that. The method is modified from a recipe shared by “The Country Trading Co.”, a family-owned supply store here in New Zealand that sell all sorts of useful products for people who want to live a simple and self-reliant life (and with whom - as of today - we have an affiliate link for!) I gave up trying You Tube recipes for ginger beer a year ago as my results were far from tasty... For some reason your beautiful channel encouraged me to try again..... I followed your process exactly and after 3 weeks I am please to tell you I am enjoying the best ginger beer I have ever had... I bottled them in plastic 300 ml soft drink bottles and did not have to release any pressure during the storage period... I am from Quebec Canada and summer starts for us in just over 20 days so be sure that your ginger beer will be a treat for me and my family throughout summer and fall... Oh yummy! I appreciate how everyday chores and projects turn into a family lesson. It's an incredible life you folks have chosen to build for yourselves. I live off-grid I'd really enjoy my Gardens building and creating along with my various farm animals, but no one else in my family seems to enjoy it. I learned so much visiting my grandparents every summer and helping them on their huge Farm.

This was so much fun to watch! My late father-in-law used to make homemade root beer every summer. He lived right in front of us and I remember one particular night, it was very late, I heard this commotion outside. I could see his back door was open with the light on. I went outside, only to find him standing in the yard looking rather flustered. He had been awakened by the sound of exploding root beer bottles on his back porch! He had jumped out of bed, ran and grabbed the wooden box of bottles, and carried them out as fast as he could before another exploded. Once everything settled down and the "danger" was over, we had quite a good laugh about it. Such good memories! ❤ It's lovely to see your family enjoying your ginger beer, even as we all enjoyed Dad's root beer. Thank you for sharing your life with us, and keep these lovely videos coming! ❤ P.S. I love your kitchen. I paused the video several times just so I could have a closer look! 😊

Thank you very much from Germany for this wonderful method, I love you from the first time you watch your video. I'll try it out in a minute and I'm looking forward to it. In a similar way, I make water kefir lemonade every day from 1 fig, 30 g cane sugar, 2 slices of lemon and 500 ml of water together with water kefir. Also a delicious drink made by natural fermentation. Best Regards!

I just retired two days ago and this sounds like a very good recipe to start once I move back to West Virginia sometime later this coming month. I've had Ginger Beer form some of the local organic markets. It does take getting use to the taste if you have never had it before. Oh, the wonders of a little boy, I to played with praying manic when I was a little one. Loved the batten fort, it's so wonderful seeing the way you are raising your children, it reminds me of the way we were raised. But sadly most parents these days do not raise there children that way anymore and I feel that is the biggest problem we have in this country today. Thanks so much for this recipe! I make lemon barley water when the boys are haying. Its been a long time since I have come across a Praying Mantis. We used to find them in the gardens of New Hampshire. Also another insect named a Walking Stick. Your farm reminds me of my childhood in the 1950s. We do try to honor and preserve many of these traditions today. Sometimes people will comment to me that, You "can't" go back again." Hopefully our lifestyles will make a difference. I do see more USA homesteading channels. There is a cluster in North Carolina that I watch. It is encouraging.to see them embrace going back to the land.

Eagerly awaiting for your next video.... please share sourdough starter. i am into baking... and i bake sourdough breads too. but my starter is dying so wanted an insight on the same.. i want to try your ginger beer.

The most depressing thing about this video, is realizing that ill never have a family like this , this rich in happiness. So much laughter and joy and full of Life. This whole family lifestyle is just so rare nowadays.......but its what most people truly truly want but can very seldom make happen. Life falls apart most of the time for most of us. Working a job chasing MOney is a never ending vicious cycle most of us are somehow stuck in. But on the other hand it makes me smile to see your family and how happy you all are :) im Glad you guys have this, something to call a life worth living. Much love from the PNW

What a pleasant surprise, another video from Homewood stoves. There are only a few video channels I watch that actually bring a smile to my face when I watch them. Homewood stoves is one of them. In fact Homewood is the only one that doesn't have a dog in it that will make me smile. Haven't seen the Grand parents in recent months. I hope they are doing well. I just love it. In the future, I suggest that you a make a serie of vídeos teaching others fermented foods and drinks, because many of us maybe heard about the benefits of probiotics, but don't know enough to produce from zero at home and you guys have the hability to teach us in a easy and simple way.

Delightful as always! Last week we got a "bug" from a friend and have been enjoying making some of our own. There really is something about location that plays into how well things ferment. When we were camping and traveling through Yukon a number of years ago, we were amazed at our sourdough - it was so healthy and active, like we've never had here at home! Must be all the clean wild yeasts that come from camping in the boreal forest. Plants seem give off some incredible things for wild fermenting... We have a friend who, when they start their new sourdough, put their starter amongst the comfrey plants. Anyway, loved the whole video (and the mantis!). Warm regards from Northern Alberta, Canada :)

I was born in NZ and my mum always made us ginger beer. I am now 45 and live in Scotland and ive been trying to find a recipe that had sultans in it. Because i remember she used them. I have just started my ginger bug now. 😊

Girona is in Catalonia, my place of birth, and it's a great region full of beautiful landscapes, beaches, delicious food, traditions and lots of masies (traditional country houses), perfect places for your marvelous stoves. In Catalonia, the Balearic Islands and Valencia we speak catalan, one of the four oficial languages in Spain :) Menorca, the island we live in, is exactly in the antipodes from New Zealand! Isn't that astounding? XD. Hope to visit your amazing country one day. Take care!

I will try to do this with my grandparents. They watched the video with me and loved the recipe. It is so beautiful to see how children respect even the smallest creatures. Great video! I find your videos therapeutic! Seeing your kids run around out in the open and being kids and away from screens. Enjoying a bottle of ginger beer with homemade food and not processed foods. Please make more videos over the other fermentation recipes.
