I'm regrowing a scoby as fruit flies got into my jar with my scoby hotel 🤪. I drink my kombucha and leave about an ounce left with the "scoby particles", I add that to my tea mixture (this way I get to drink about 15 ozs of the store bought kombucha. Results are the same!. Thanks for posting 😊

@@GourmetVegetarianKitchen I'm elated that you replied. My point is to be able to make or prepare the kombucha drink without even buying a kombucha drink to grow the scoby. Often one hasn't got the opportunity to buy kombucha in most places around the world as it only recently gains popularity. As I intend to live life in a simple way with no or little dependency on outside especially supermarket, I just want people to be able to live more an independent life. Would love to show people how to live a fully sustainable life of being able to grow one's own food, build one's own house and make one's own utilities. This would then allow young people a way to see an alternative to an otherwise almost hopeless world of dependency on money as we regrettably now found out. I'm just ranting, forgive me! Please continue making your loving videos. 😘

when the bacteria eat all the sugar, the sweet tea get sour and fizzy. When you strain it, put it in airtight bottles and leave it at room temperature for a day or two before moving it to the fridge. It will continue to ferment and the the airtight bottles keep the gas in and make it fizzy. If you add 20% of fresh juice with a little sugar during this time, it makes the kombucha fizzier.

I don't mean to dump on your video. I'm just frustrated that about a dozen videos from different creators now all claimed "from scratch" but require a bottle of pre-brewed kombucha. They're all more "how to extend kombucha" than "how to make it *from scratch*". I'd love any insights in how to truly start from scratch, if you live in a place where commercial kombucha isn't available.

@@ArmaniBluit’s like usually with sour dough. You need a preexisting culture. There is no more from scratch than starting with a culture. From scratch means without a strong starter liquid and without a scoby. The bacteria and yeasts have to adapt to your specific situation in your flat. The bought combucha is only a help to get the needed bacteria and yeasts specifically for kombucha that usually might not exist at your place. That’s why the store bought one has to be unfiltered and not pasteurized. Raw. See it as buying the bacteria and yeast. A sour dough could theoretically be created by just adding water to flour and adding heat, because the needed bacteria are regional. For Kombucha you need specific bacteria and specific yeast though that are not usually present in your region. The first step is then to create a scoby and a strong “starter liquid” from scratch.

The thing you call scoby isn’t actually the scoby, that blob is a byproduct from the fermentation and isn’t necessary to have when making a new batch, you can throw it out and it wouldn’t make a difference. Scoby is short for “symbiotic culture of bacteria and yeast” and is actually referring to the starter fluid you use when beginning a new batch. It’s unfortunate that this misinformation has become so widespread. Also, making it from store bought kombucha isn’t really recommended if you want a wide range of good bacteria. 7 days sounds like a very short time so I suspect it has a low variety of bacteria. I understand that I probably come off as snarky, I was really hoping this wouldn’t be yet another misinformed kombucha video. 😅 (Also sorry if I didn’t word things correctly, English isn’t my first language).

@mikk5540
@mikk5540 4 жыл бұрын
Daniel Belda There is no way to make it completely from scratch. I recommend you look up someone who sells starter kits. Here in sweden we have Facebook groups for that. There’s also companies that sells it but I personally wouldn’t go that route because of the misinformation. I’d choose someone experienced who has brewed it on black tea and white sugar (not honey, agave or anything like that). I should add that making “failed” kombucha is totally fine and can still be tasty, but that person should be aware that it isn’t the same as authentic kombucha with that wide range of bacteria. :) I also wanna add that once the kombucha has been improperly brewed it can’t regain it’s lost culture. That’s why it’s important to get a good starter fluid (scoby). I hope that helped :)

Predestined what do you mean? It’s not from scratch. Modern day kombucha is made from a culture that started somewhere between 200 to 2 000 years ago (apparently they haven’t figured out the exact time period it originated).

Dude, could you please give us some references instead of writing lengthy messages tainting the work of this lovely woman based on nothing? That “misinformation” is so widespread that there are even books writen about it. This what Sandor Katz says in “The Art of Fermentation”: ‘To grow one, simply pour a bottle of kombucha--preferably plain, without any particular flavoring--into a wide-mouth jar, cover with a cloth, and wait about a week (longer in cool temperatures) for a skin to form on the surface. This skin is a kombucha SCOBY.’

Da viD sorry for writing long comments 😅 I’m in no way an expert, scientist or anything like that, just a bit nerdy. This is information I’ve gathered in Swedish from people who has been studying and doing this stuff for a long time. I tried to find some resources in English but the internet is filled with this narrative that the cellulose is what contains the magic tho I did find some forums where people had done their own testing and came to the same conclusion as what I’ve stated. But as I said, you can do it this way and you’ll get a tasty kombucha. That’s totally fine. I just wanted to clear up some misconceptions. I’m gonna make a other attempt at finding some sources in English. Sorry for yet another lengthy reply. 😅
