@@FermentationAdventure Hi my favorite fermentation instructors! Do you have a video on making apple cider vinegar? I am currently fermenting chopped up apples, water and sugar. 1 month with a coffee filter on top. Then I was told to strain and bottle and ferment for a month to get ACV. Is this correct?

Made my own scoby after watching your other video and am now doing the secondary ferment. This is my first time making kombucha and you guys made what seemed like an overwhelming and complicated process simple and fun. Thanks so much, never buying store bought kombucha again!

I just drank my first bottle of kombucha. I made it. It's so good, it's at room temperature. I put the rest in the frig. I've been watching your videos and you brew kombucha. I'm also making apple vinegar and orange vinegar. My husband bought me a big glass jar for my soby hotel. Thank you for you're videos and I made my soby myself.

Just wanted to thank yall I've been following your videos on how to. The first few days nothing really happened with my scoby and now I have an absolute MONSTER of a scoby in my kombucha mix right now. Seriously I can't believe how massive this scoby grew lol

That's so awesome A P! Isn't it crazy that the scoby can grow so fast? It usually starts off where you're looking at it like, is that a scoby or are those bubbles. No that's a scoby! We hope it's going well for you!

I love making kombucha! I also use the scoby cut into prices in my dehydrator after soaking the scoby in a fruit juice for 24 hours. Delicious!

This is the video that has made me feel the most optimistic about making my own kombucha! :D When you learn about the health benefits of kombucha you want to drink it everyday, but when you have a family and you multiply that $3 bottle times many, and then again if you want to drink it multiple times a day..... it becomes a very expensive DRINK that can easily triple your food bill. (If you consider a typical family homecooked meal costing $1-5 per meal) Making it at home is a life-saver! Thank you for such a fun video!

I am so excited to give an update! 😬 So my very first batch I made a couple weeks ago was strawberry lemonade Kombucha and it was pretty good. I just bottled my 2nd batch yesterday which was pineapple and mango. My tester bottle was already quite firm so I burped one of my ez cap bottles and it’s pretty carbonated. I may burp the others and let it go 1 more day. I even enjoyed the little I had left over right out of the fermenting jar! Why I never tried Kombucha until recently is a mystery lol! And homemade is SO much better and better for you! I love it and all the different flavors to play around with. Thank you again for all your knowledge and instructions on fermenting! Love your channel! 🤗❤️

Good day from South Africa. I'm a big kombucha fan since finding out how easy it is to make your own brew. A friend of mine gave me a SCOBY about four months ago and I haven't looked back since! My Kombucha is delicious (far more flavourful than the store bought), very healthy (especially if you need help with your digestive system) and cost a small fraction of store bought! I am delighted with the new ideas you are coming up with regards to unusual flavours and I am definitely going to try them. Thank you for your very interesting videos and for sharing your knowledge. I have just started off on the Ginger bug program watching your videos. Struggling a bit to get the bug to wake up but I will keep going and hopefully it's just maybe the cold spell we are going through that is hindering the progress. No bubbles yet and we are on day 3 but it smells delicious and looks cloudy. So waiting to see what happens. Thank you again and keep up the good work.

We will come out with a video on this... 😂 But for now, just know that it's basically one big jar of plain sweet tea that you can place all your scobies in. You would just need to keep refreshing the sweet tea every 6 weeks or so by dumping out most (but not all of the liquid) and then topping it back up with the fresh sweet tea. It's basically like continually creating kombucha on the counter. 😄

​@@kristensmagicalcreationsyou don't need the cellulose part, that's not really the scoby. The scoby is the liquid starter, you don't NEED the pellicle (the round spongy scoby) you could just throw it out and use the liquid, if the starter liquid is strong and you save enough it'll be just as quick to ferment

Thank you so much for your helpful videos. I have been trying all different flavors of kombucha. The first batch was ginger lemon, but then I tried raspberry. My husband found some fresh ripe peaches and that was the best kombucha. Pineapple was really good, then we did pineapple mango and pineapple cherry. I just bottled up some dragon fruit with mango last night, hope it is good, too. It really is as easy as you show in your videos, just put the fruit in the bottom and let it sit a few days. I've also got one of my daughters-in-law helping me and happy with payment of a couple bottles to take home. She just needs to bring the empties back!!! Thanks!

Hi everyone! Welcome to our channel and thanks for stopping by to learn about making kombucha! 😄🥰If you're wondering about how to make and maintain a scoby hotel, we wanted to share a quick overview here. A scoby hotel is basically one big jar of plain sweet tea that you can place all your scobies in so that you can store them for future use. You would just need to keep refreshing the sweet tea every 6 weeks or so by dumping out most (but not all) of the liquid and then topping the scoby hotel back up with fresh sweet tea. Hi there! I’m new to fermentation and your videos are the best starter guide! Thank you! I have a question : what do you do with your starter tea after you have made your first scoby? I removed the Scoby to make fresh kombucha, and I don’t know what to do with the leftover tea. 😮😊

Hello! We're happy you're enjoying our channel and we're excited that you're getting into the awesome world of fermenting! The starter tea will likely smell and taste very strongly of vinegar. You could cook with it as you would with apple cider vinegar, and you could also use it to clean since it is so strong. Hope that helps!

I love add in pineapple juice to my second fermentation! I’m literally about to bottle more kombucha tomorrow and I think I will grab a jalapeño for one of my pineapple bottles. I love using GT 1.4 litre bottles because I only have to bottle three bottles per gallon. Also, when the kin begins to bubble then I cold crash it for a few hours to trap the carbonation and then open it to see if it’s fizzy enough for me. I’ll never go back to swing top bottles

Thanks for the question! We'll have to get a video out on that sometime soon. You can just cover your scobies with fresh sweet tea and leave it for a long time the same way you would with making kombucha. Hope your kombucha is going well!

Very informative! Can you please tell me how many days ready kombucha can stay out of the fridge, because I don't like cold drinks.

Thank you! We'd recommend still putting the bottles in the refrigerator when you're not drinking them, and then just remove a bottle from the fridge a few hours before you'd like to drink some. When it's out of the fridge, it could possibly start to build up some more pressure in the bottles, so we'd recommend burping it after you've taken it out of the fridge or to leave the top open while you wait for it to warm up.

Oh yum! We love raspberries! We used it in our water kefir video, but will have to give it a try in Kombucha! We're curious if you prefer to strain off the seeds or leave them in?

I am just discovering your channel on my fermenting journey. I don't know if it's been suggested but, for serious heat lovers, the fruitiness and heat of the habanero could work well with a larger batch. I have integrated habaneros into my detox recipe and may have to with your recipe. I grew my own this year and have plenty to experiment with.

Thank you for 2nd fermentation info! The scoby is not needed. Only starter tea matters. You're better of discarding it after each batch for consistency. It's simply the by-product of the yeast and bacteria doing their thing.

Hello guys, thank you for sharing this recipe. It is awesome. First time, I made Kombucha and two days ago, I flavored(secindary fermentation) it with pineapple and it turned out awesome, so delicious. But it has also formed a small baby scoby in the bottle. We're excited for you to get into making Kombucha! For the beer bottles, we usually just use a little soapy hot water to wash. Then we let them air dry upside down. We've been using this rack for years: amzn.to/4bapoLm Hope that helps!

Can we use the Scoby hotel tea as the starter for a new batch of kombucha? Would it be overly acidic and how do we decide how much of the matured starter from the hotel to add into the new batch? We also have to pour most of the Scoby hotel tea away brew a new sweet tea to refresh it for every 6-7 weeks. Can I just replace some of the hotel tea with my new batch of Kombucha tea instead? Thank you for clarifying on this matter. Looking forward to watch your video on how to maintain the Scoby hotel healthy.

Thanks for the suggestion Jeff! We'll definitely do a video on the in the future! In the meantime, there's not a ton you have to do with it. You can always drain off most of the liquid and add fresh cooled sweet tea if you want to keep a bunch of scobies happy. We hope that helps and thanks for watching!

We hope we've helped get you started! We haven't made that video yet but basically you can just put scobies in a large jar with a little finished kombucha and fill it with sweet tea. That should keep for a long time on the counter. Really though whenever we've saved scobies we never seem to use them! 🙂

Hi! It's kind of crazy, but no, we haven't gotten around to recording that one, but... the scoby hotel is basically like keeping a batch of kombucha going on the counter at room temperature, where you would continue to refresh with fresh sweet tea occasionally. And the scobys would continue to multiply, so you would probably end up with more scobys than you need, so some people will eat them, make them into jerky, or candied scobys. Or better yet, gift them to friends! Hope that helps!

It depends on how warm your house is and how active the kombucha culture is but I'm sure you'll have some delicious kombucha pretty quick! It really depends on how strong you like the vinegar taste so probably in a week or less if you like!

Hello! That video's not out yet, but the scoby hotel is basically one big jar of plain sweet tea that you can place all your scobies in so that you can store them for future use. You would just need to keep refreshing the sweet tea every 6 weeks or so by dumping out most (but not all) of the liquid and then topping the scoby hotel back up with fresh sweet tea. It's basically like continually creating kombucha on the counter. Hope that helps! 😄

scoby is very easy to make from GT,S origanal synergy just leave 1/5 of the bottle untouched and add a teaspoon of white sugar.and wait for about a week

So helpful and I feel much more confident in my ability to make own kombucha at home now! I am still wondering if I need to "burp" the flavored kombucha every day after I move it to the fridge and begin drinking from it or there is a point where there is no longer a cause for concern that it will explode?

Hi! That's great that you're getting into the fun world of fermentation! How much burping is needed really just depends on how active the ferment still is, meaning how quickly the pressure is building. If you wait to refrigerate your kombucha until it is less active, then there will be less concern while it is in the fridge since the fermentation process will slow way down in the cool temps. If you notice the pressure still builds quickly, then you may want to burp it more regularly. Hope that helps!

Do you strain the fruit out after the second fermentation or does that stay in the bottle until it is all done? Do you eat the fruit?

Hi! You can definitely eat the fruit after the second fermentation! Fizzy fruit! You can choose to either leave the fruit in the bottle while you store it in the refrigerator, or you can filter it out. If you filter it out, however, you would lose some of the carbonation that was building during secondary fermentation. But on the other hand, the fruit can get soft and lose its taste while your ferments are being stored in the fridge for a long time. We find the best solution is to leave the fruit in, but to drink it within a month. Hope that helps! ❤️

We're working on that one soon Gretchen! In the meantime, basically just make another batch of kombucha and you can put your scobies in that. Every once in a while (maybe a month or more) make a new batch of tea and transfer them in there. That should work great! Thanks for watching!

I really like your videos! I have been trying to make mavi or mabi or mauby which is a fermented beverage from Puerto Rico that i grew up with that is fermented in the sun using a tea made from mavi bark along with cinnamon, ginger, and white and brown sugar. I have yet to create something I'm not afraid to drink. Lol. I don't know if you have ever heard of this or have any advice. I have been getting dark sediment that looks scary to me and not what I remember from growing up. I have been avoiding anything that doesn't smell like what remember. Any advice appreciated.

Hey Fermentation Adventure! I was the guy who requested a Kvass video a while back!. Would it be possible if you could do another video however I am curious about Banana Beer. (similar to a ginger ale or more alcoholic if you wanted.) The reason I am requesting this, is because it seems to be quite difficult to properly settle all the solids in banana. I made an amazing banana beer but it was cloudy due to the banana sediment. Maybe if I had waited longer they would have fully settled to the bottom? I'd love to see you two do a video on making a crystal clear beverage. Its an amazing desert beer and goes well with many things (like coconut icecream :) *I saw you two had that* )

Great videos, quick question, how do you guys top up the Scoby Hotel? When I start a brew after having created my first scoby I took 2 cups of bucha out of the hotel with the scoby for my first brew. How would I go about topping of the scoby hotel now? Do I brew additional tea with sugar and just top it off, can I just top off with water, or do I take 2 cups out of my first brew and put it in the scoby hotel? What options are viable?

Yes it will definitely mean it'll be less fizzy but you don't want any explosions! One way you can gauge how much pressure is in the bottle is by using a soda bottle that's made for pressure and giving it a squeeze. We hope you're getting some tasty kombucha! 😊

Hello- Great videos. On the secondary fermentation you used the kombucha plain (no fruit ,etc) and capped the bottle it and you said something like "with the carbonation added". Where did the carbonation come from?

Thanks for the question Jerry! Since the kombucha starter is alive, it's eating the sugar and turning it into alcohol and gas. If you put that into a bottle made for pressure, the kombucha starter will keep producing C02 and build pressure up in the bottle. It's adding carbonation itself from the fermentation process. Thank you so much for the question Jane! It really depends on how active your starter is and how warm your house is that you're fermenting in. It might be more or less. You can taste it along the way to see if it's a flavor that you like. If it's too sweet you can let it go longer. The longer you go the more vinegar taste it will have. We hope that helps!

Thank you for introducing me into the world of fermentation WOW 🤩 I am well up on my Water Kefir grains Production and great flavours and plenty Carbonation , so thumbs up there. Hoping you may be able to help with the Kombucha 2nd fermentation? This video you started with 4 types of bottles the fruit and nothing added but you never showed the finished product of the nothing added brown bottle. I say this because i have been trying with the 2nd fermentation without adding any fruit or sugar and the bottles are very low in carbonation in fact none. have left for over a week. The SCOBY is very healthy in the first stage( 8 Days warm enviroment ) and grows and lots action in tea solution, but the second ferment bottled & sealed, sits and no carbonation. Can you suggest a solution , much appreciated

Wow, good catch about that brown bottle of plain kombucha! 😅 We did try our plain kombucha right after the primary fermentation and it was refreshing! Here's that exact moment: kzbin.info/www/bejne/qoG5fpqHeJ5kg9Esi=ciEPFEuoS1_d_uWS&t=398 🥰 But, as far as building carbonation in the second fermentation, the fruit really helps kick start the process and it's much easier to get carbonation that way. You could try bottling the plain kombucha sooner so that you catch the kombucha at a time when the fermentation process is still going strong. That might help create some more carbonation, but just be cautious that the pressure could build more quickly in the bottle.

How do you know when the first fermenation is done/ready? What is the sign? The ready new scoby? I have been ding Kombucha for 2 months now, and when I first started I was told it's 2 weeks. But I'm in Spain, so the tmperatures here are about 27-32 degrees Celsius in summer.

We like letting the first one go much farther than we would normally like to make sure a scoby grows. After that it tastes very vinegary and we like to ferment one more batch from it to drink. It's tasty stuff!

Oh no! Wondering why you may have gotten the mold... Too much Scoby drying out and above the water line, perhaps? Personally, when it comes to mold, we would lean towards throwing the batch out and starting over. Thankfully it's fairly simple to start a new Scoby and make some new kombucha. Hope this helps!

The starter tea I'm using is from the liquid that I make the Scoby from scratch. With this liquid there's sediment at the bottom, do I mix the solution up and take enough to use it as a starter tea or do I not mix it and just use the clear solution that's on top? Thanks so much for the question Jane! You should be able to use the clear liquid or mix it up just the same. The starter tea should have plenty of culture in it but it's also a more acid pH to give the scoby a comfortable pH to live in. I hope it's going well for you. Happy fermenting!

I have scoby whose hotel is not tea, it is from apple cider vinegar. Just so I understand, may I add this liquid to any starter liquid such as the tea you made here? You may have addressed this with me in another video so please be patient with me. You’ve mentioned cross contamination before therefore I wondered about bacteria not being the same kind of bacteria 🦠 in the two solutions therefore it might not ferment. To put it another way, do I need to start anew and make a tea scoby in order that I can make a tea kombucha?

Hey, I followed the steps in your original video to make the scoby from scratch. I’m using that original batch as my starter tea and using the scoby from that batch. Can I let the rest of that starter tea batch sit out on the counter and wait until the new batch has finished fermenting and add the new scoby’s into that original starter tea as my “scoby hotel”? Also, should I be adding water every time I take out some of the starter tea for a batch? Hopefully my questions made sense, thanks!

Thanks so much for the questions Faith! It sounds like you know what you're doing! You could either leave your scobies in the same batch they were made in or even start a fresh batch of kombucha using the same method and put all of your scobies in that batch. It should work well. If you let the starter tea batch sit on the counter you'll probably see that you'll even get another scoby on top of that batch after a bit of time. You probably could add water if you like when you take out some of the starter but instead what we do is just make a fresh batch of kombucha so it doesn't dilute the tannins to make sure the tannins keep in balance.
