Ingredients and Measurements:
For a large batch:
1.8 lb. coriander seeds
3.5 lb. cumin seeds
3.5 lb. black peppercorns
1.8 lb. fennel seeds
0.9 lb. cinnamon sticks
1.8 lb. methi (fenugreek seeds)
1.8 lb. white mustard seeds
0.45 lb. mangrile (kalonji/nigella) seeds
3 small packages of whole dried turmeric (each pack contains about 5-6 small pieces)
For a small batch:
1 cup coriander seeds
2 cups cumin seeds
2 cups black peppercorns
1 cup fennel seeds
1/2 cup cinnamon sticks
1 cup methi (fenugreek) seeds
1 cup white mustard seeds
1/4 cup mangrile (kalonji/nigella) seeds
5 small pieces of whole dried turmeric

I like the taste of the Guyanese Garam Masala I bought in Toronto. You make such a big quantity!! Even when you make the smaller recipe. I guess you use it every day! Plus I gather you sell it. Good for you!

Trust me this is better than any store bought masala, especially since it is fresh. We make so much to last us the entire year. Everyone in our family gets a small parcel.

Hey Matthew, thanks for uploading a Guyanese masala! Is there a way to roast the spices in the oven instead of on the stove? How long was the whole process, from start to finish?

Since we made such a large batch it took about 6-8 hours (it is a whole day process when making a large batch). But if you make a small batch it'll take less time. If you want to just roast in the oven and not on the stove then you need to dry out your spices for a few days after washing (until completely dry) Nd then you can put on a cookie sheet and roast in the oven and turn it occasionally. However, this does not really save time since you have to leave them to dry for the few days.

@@matthewsguyanesecooking4601 Hi, if you wanted to complete this process in the oven on the same day, you can....it will take a longer time to dry them out and then start roasting. To dry them out you will want to keep the temperature at 375 degrees and turning occasionally. Once the spices are dry you'll want to raise the temperature to 475 degrees to start roasting. You should use a regular foil tray if using this method, because if you use a sheet tray it will be all over your kitchen; the foil tray is deeper. I hope you try this recipe. Enjoy

Like 1-2 tbsp. for the small batch. And 1/4 cup for the large batch

Different spices. Not sure exactly what is in the amchar masala but I have cooked with it and it gives the entire dish a different taste

You can use them if you want. It makes the masala darker though.

Lol in Guyana our family didn't use that. They used a masala brick (lorha and sil). My grandmother still has hers, however, her hands hurt using it now. So we use the blender.
