As a graduate of The Culinary Institute of America and a chef for over 30 years. I would like to mention you should add potatoes to cold water and let the water come up to a boil while the potatoes are in the cold water. The starch in the potatoes can react as soon as it comes in contact with boiling hat water. The outside will cook quicker and the potatoes will cook uneven.

My grandmother was a farmer and she had said if a vegetable grew in the ground, such as potatoes that you dig up, you start them cooking in cold water, but if a vegetable grows above ground, you’d start cooking them in hot water. Maybe an old wives tale, but who knows?

In my family they had multiple names for white gravy. Chicken gravy, bacon gravy, sausage gravy, they seldom made it with butter.

My grandma told me a long time ago (when I was a young girl), how to determine the amount of potatoes to prepare. A good rule of thumb is: 1 potato per person , plus a potato for the pot. Of course, one must also consider the size of the potatoes being used…. I’ve enjoyed watching your videos, along with your memories of the persons who shared their recipes along the way. Thank you.

My mom always fried chicken and then used the grease with bits of the crispy fried part left with the grease to make her milk gravy. She always just served with boiled potatoes but that was my very favorite meal from childhood. The bits of chicken with the fried crust gravy was divine. I never fixed in adulthood because she never taught me to make gravy. Thank you for teaching me, now I can fix and eat one of my favorite meals.

If you don't have bacon grease, chicken fat or duck fat also work. Like you said fat or grease or butter help create the flavor. If allergic to milk or don't eat dairy or something, people could use that potato water to make the gravy and the potato starch will aid in the creaminess and thickening. Ya made me hungry! I have a bushel of potatoes in the crawl soace, too! Yes, creamy with a few small lumps!!

I usually put at least 2-3 sticks I’d butter in my mashed potatoes. I use heavy cream instead of milk and they are incredible. Anytime I go anywhere where there’s food I’m asked to make mashed potatoes. They are so good. *pats self on back* 🤣🤣🤣 Dad always made bacon grease gravy. So so good. Anyone who doesn’t save and use bacon grease is off their rocker. I have a friend in England and he thinks I’m insane for using bacon grease. Until he used it to sauté some mushrooms in. He’s now a believer. Great video. I’d do love to sit at your table! 💜

How long does bacon grease last? Bacon grease is wonderful for cornbread and other southern food as well as the gravy. We save it, and we put it in the refrigerator. I can't tell when it spoils and how long it takes to spoil.

I love your videos because a lot of people just don't know how to make even the simplest of things. I do because I was raised in the country in the South. My favorite potatoes to mash are the russet or Idaho bakers. Red potatoes, to me, always turn out kind of a gummy consistency. Although I've used regular milk in them, I prefer to use evaporated milk and always real butter if I have it. Good gravy! Or, if you are in a pinch and need something more low fat, Morrison's white peppered gravy mix in the white bag at Walmart is very good. It is also a good thing to have in your pantry. On a side note, try making tomato gravy sometime and serve over biscuits. It's an old Southern recipe. God bless! Nancy Moore from Arkansas

Tom and Melissa this recipe made me think of my Momma and my dear Mother in law (who is still with us thank the Lord). They are true Southern ladies who only made two types of gravy. Brown or White. My Momma always had lots of pepper in her white gravy so I was with you Tom on the heavy pepper. Since I am still rather new here I want to make a request. Please think about doing holiday meals for us. I would love your take on Roast Turkey. I always make too many mashed potatoes too, yeah, we do potato cakes, reheated mashed potatoes but my favorite is to leave the mashed potatoes in fridge for a few days, cook some potato soup and use the mashed potatoes as my thickener. I used to visit an old granny lady who always had to feed me, (Yes that is the Kentucky way at least in my family). She would make me potato soup using mashed potatoes, a couple cooked potatoes, celery etc. If I am not feeling like eating much I will pull out my emergency box of instant potatoes and make a little soup. You said there’s a few small lumps in the potatoes. We don’t like any lumps in our potatoes. You only checked one potato, but I think you should always check your biggest potato. I also try to make my mashed potatoes a little thicker with a little less milk when you’re having gravy because otherwise you have that gravy river that I hate there is only my husband and I so I make two medium potatoes and one for the pot so that’s three medium potatoes. Tom, I think in your case, you should make three medium potatoes and one for the pot. I just love your videos. You were talking about all the things that it goes with. I usually make gravy with the roast, and chicken gravy with the chicken and beef gravy with the beef and sausage gravy with the sauce. A good rule of thumb is to boil one or one and half potato per person. The more people then just go with one med potato per person and you will have around two servings per person when you judge like that. If we are having a salad and a couple of veggies you just eat an average serving. If you are serving just meat and potatoes then obviously your serving size will be larger. The hardest thing for me has always been cooking for two. 😊 ❤

Wish I could cook the same time you do- I watch your videos when I go to bed. Alot safer for me. Insulin dependant diabetic. But watching the potatoes and gravy video, almost had me getting up to try my hand at it. I love your videos because sometimes you really do take me back to my childhood. When you showed the koolaid pies, I was six years old again in hot Chicago weather. I need to go back through all the other videos that I can and see there I know was one other that took me further back. Bless you, Tom and Melissa. I could use some help with the younger generation of cooks in my family.

I was always taught to allow/cook 1 medium/large potato per person eating. ??? Always worked for family, maybe adding a couple of extras if desired. Love your videos sooooo much.

You can add cold water or milk with corn starch to the hot gravy if it gets too thin. Just for future reference. It seriously does work. Doesn’t take very much. Maybe 1/4 cup cold liquid & 2 T corn starch. Whisk into the gravy & works like a charm.

My parents made this and salt pork as a meal when we were kids. Fed the whole family of 7 people for just pennies!

Lately, I've found the potatoes cook quicker and more evenly if you slice them 1/4" to 1/3" thick. I agree about using cold water, not boiling, to start with. Like pasta, salt the water once it boils. Covering the pot with a lid makes it boil faster but be careful not to let it boil over!

Try using evaporated milk for mashed potatoes instead of whole milk You'll never go back to milk. Makes them richer and adds so much flavor. Delicious!!! I use evaporated milk to my gravy also
