Hey tucker first of all I see your onion dicing game has improved since you first started shitty cooking, seems like you've come a long way :P also hopefully you don't feel too bad, you're always learning from mistakes in cooking and its usually the best way to learn. I usually braise my meat in the oven with a dutch oven, and the oven actually gives the meat a nice brown crust instead of having to sear it too long on the stove top. You just have to make sure to leave a little meat uncovered by the liquid. I usually leave the top barely uncovered and I check it often like every 30-45 minutes to add more liquid. It's so cool you tackled making pasta homemade. It's something I've been putting off for almost a whole year, and I think those ribbons looked nice. I'm surprised you didn't try making Ravioli first though since it seems easiest, and hard to mess up since the filling always saves the dish imo

The reason the short rib is like that is because you didn't baste it properly, using butter, thime, and rosemary, gotta constantly baste the meat so it doesn't dry out and stick to the pan. Basting it also puts the flavor of the meat that leaked out back into the meat with extra umami.

I work in my local County Jail as an officer who books people in. Part of my job is to record Fingerprints and take Mugshots. Another less well-known part of my job is that I also have to take pictures of the Tattoos people have, excluding the ones that are on more private parts of the body. Anyway, I was taking pictures of this big burly redneck dude and he told me he had one on the back of his shoulder. Of course, I had to take a picture of it, so I had him turn around and lift up his shirt. I nearly burst into tears trying to hold back the laughter after seeing "BIG COUNTRY" permanently (and unironically) etched into this man's skin.
