As many of you know I have been harvesting pawpaw like crazy over the last few weeks. I recently shared a video of how I like to process my pawpaws so that I can save my pulp and freeze it for later. By far my favorite thing to do with my frozen pawpaw pulp is to make easy vegan pawpaw nice cream. Pawpaw has the flavor of a mixture of banana, mango, and pineapple, so this is definitely a tropical dessert!
2 cups (~12 ounces) frozen pawpaw cubes
1/4 cup plant based milk (oat, almond, soy, etc)
1 teaspoon vanilla extract
1. Add all of the ingredients into a food processor or high speed blender. Mix on a medium/high speed for 30-60 seconds or until the mixture is nice and creamy.
