I received a gift of some 00 pizza flour. Wooooooooo!!!!!
I am just messing around doing something different from my usual. I wasn't even planning on filming it, but here we are. I will make a video for this dough recipe.
This is a higher hydration dough than I normally work with. As it makes for the style of pizza that is not of my preference. If you like a nice soft chewy dough, then this is for you.
If you want to know the hydration %, then do the math. I couldn't care less.
The recipe that I used is:
500g 00 pizza flour
350g water
12g salt
A pinch of instant yeast (quick rise)
Mix all ingredients in a container until combined. Cover and leave on counter for 10-12 hours. Place in fridge for 24-72 hours. Up to you how long that you want it to ferment. Portion and make your dough balls at least 4 hours before making your pies. Make sure to leave portioned dough in an oiled covered container at room temperature.
Go make some pie!!!
