I love bolognese. 2 important tips I’d like to add though… Before adding the sauce, you need to make sure all or most, (like 99%) of the liquid has evaporated from the meat cooking. Also, 2nd tip, atleast 4 hours is best to low and slow cook bolognese. 2 hours is nowhere near enough.

🥫Ingredients: - 1 lb ground beef - 3 sticks of celery - 2 sticks of carrots - 2 onions - 2 large cans of whole peeled tomatoes - 1 bottle of nice red wine - some olive oil 🧭 Directions: - add olive oil to pan - cook onion, carrot, & celery - add beef - add red wine - add canned tomatoes - simmer for 2-3 hours - surround yourself with ppl you love - ensure you’re in a good mood - cook the food with extra love ❤️ Enjoy 😘🤤

The Bolognese sauce or SUGO, my mother made was always made with two parts ground beef and one part Pork, small glass of red wine. Celery, carrots, onions and garlic were sautéed in olive oil first, which we call soffritto! The Tuscan way. All was combined and simmered.

I 100% agree. That is what I witnessed my aunts and my nonnas making growing up in Veneto. When with beef and pork then definitely with celery. When with just beef then celery wasn’t always used. When the tomatoes 🍅 were heavy they called it Bologna style and when they were sieved they called it ragu. Vino and basil added and the end. ‘Magnar Ben!’ as they would say.

This is my comfort food when I was sick in the hospital ... My mom used to make it for me, she made the sauce really thick and meaty, and she would pack it up in jars and bring it to me at the hospital. The food there was OK for the most part, except for dinner... It was always something sweet, like some pudding, or porridge, and it was making me nauseous because it was artificially sweetened... So I'd pass on it and open a jar and eat it as it was with some bread

Brown the meat first remove then deglaze with the onion celery carrot mix not the other way around. You want colour on the ground meat for more intense flavour. You’ll yield a much richer deeper flavoured Ragu.

I lived next to a lady that was from Italy once She told me throw in a nice size pinch of baking soda into the sauce to stop so much acidity in the sauce It bubbles when you throw it in- IT WORKS- no indigestion! Also stress those San Marzano tomatoes only please. That's true Italiano!
