I’ve grownup on this sauce and have been driving to my fav Mexican restaurant just to get what I’ve always called “yellow sauce”. I have an electric stove and my broiler is not something I trust. So, I charred everything on a cast iron grill and peeled everything, except the tomatoes. Your sauce is bringing back great memories of eating with my Dad. This looks so good! I’ve been making a ranchero sauce recipe for years (Daddy Jack Chaplin’s) and I love it! His ingredients are very close to yours but it’s all cooked in a large saucepan and the Veggies aren’t roasted. I know from watching Rick Bayless for years that roasting intensifies the flavor so I don’t know why I never thought to do it to my recipe. I’ll try that next time and yes, I do love Mexican food❣️Marijane

This is the sauce I have been searching for for years, thank you! It is exactly the best sauce for chile rellenos I have ever had, and we just tried it on eggs and they were delicious. I have subscribed but can't find the recipe for either the ranchero sauce or the chile rellenos online, so was going by what I saw in the video and trusting the amounts of each ingredient were approximating what you did. One thing about the video however, was that the roasted tomatoes that went into the pan had no skins so removed the skins on mine before putting them into the pan. Hopefully the actual recipe will note leaving or removing the skins. Thank you so much for these videos!

This looks really good. One thing that would be super helpful is to talk about how spicy/mild it is and how to adjust. Most salsas/sauces are way too mild - even at Mexican restaurants unless I ask if they have anything that they use for themselves.

I found your video on yummly but it didn't have the info so I googled you and just have to say I'm not one to veer off and search out a recipe but after watching your chili relleno and chili relleno casserole videos, I had to come back to get the recipe for the sauce. I'm baaack;) I never got around to the ranchera sauce but made the casserole, loved it, even ran some over to mom the next day, 20 miles away, she is in to simple recipes and she loved it too! I'm so glad someone shared it on Yummly but it doesn't show the ingredients other than when you say them, but still didn't have measurements listed so that's why I had to find you! Tonight I'm making the chili relleno (not casserole) and ranchera sause. I've hit rewind so many times I think I'd recognize your voice in a crowd haha! Yes Robin you need to refrigerate the sauce. It should keep 5 to 7 days in the fridge.

One of my favorite dishes from one of my favorite Mexican food establishments, Ninfa's, is Queso Del Mar. For years I had no idea what kind of sauce it was topped with. I recently worked up the courage to ask and low and behold it is ranchero sauce. For those of you who are familiar with Ninfa's and this dish, you may know why I want to learn how to make this at home. For those who have missed out, here is a description. Small shrimp (salad size) topped on a dish of yummy monterrey jack and or maybe some other kind of white Mexican melting cheese and top that off with ranchero sauce. While it's hot, mix it up with a large spoon and a fork, scoop a desired amount and roll it up in a HOMEMADE flour tortilla. SO! Now that I know about ranchero sauce, I will be giving this a try in the near future. If you or anyone beats me to it, please let me know how it turns out. P.S. This is made and served in those oblong, oval individual casserole dishes that you can put in the oven.
