In this video I make one of Papa Chuds favorite snacks from Germany, Pfefferbeisser! This all-pork smoked snack stick is reminiscent of a Slim Jim, but a whole lot better.
These highly flavored sausages are stuffed into sheep casing, dried overnight, then cold-smoked (several times) to create a delicious treat to enjoy at any time of day.

I know this is an older video but I have to say how much I enjoy your content involving family. Food is always better with family I think. My mom is almost 94 and everyday she asks what I'm cooking so while I try to cook several times a week on my smoker. Watching your dad's expression was priceless. I always appreciate the effort you put into your videos, keep up the good work. And thanks for taking us along on your holiday trips back home.

Old Lad used make these commercially - huge batches, 26 outlets to keep supplied with these, sausage, puds, etc etc - tonnes & tonnes every week - after the grind, they used chuck the ground mix into a bowl-chopper & re-process it finer to help it bind. The "mini" version of that is a food processor. Because this recipe doesn't use rusk - like most sausage recipes do - there's no binder-filler effect from the rusk, hence the bowl chopper pass to meld it all together & add smoothness to the bite. They used hang them on racks over a low smoke to speed the drying - then crank up the smoke for the cook. Their "Smoker" was the size of a decent hotel room and they had several, but meh - scale.. scale it down.. The smoke-maker unit for each room was tiny - and almost identical to the one you're using, except a bit more "mechanised" - but same concept - loads of smoke, loads of flavour, not much heat. Then they'd let them hang - for ages.. I'm also starting to really like your family - they're nice people imo. :-)

landjager is one of my favorites, however it's a fermented sausage requiring PH check and a drying chamber to maintain 55 degrees and 80% humidity until you reach a 35-40% weight loss.

I just completed the entire process on a nearly 9 lb batch but I used 19mm collagen casings instead of sheep casings because that was what I had on hand. My fellow charcuterians, (I made up a new word!), DO NOT USE COLLAGEN CASINGS!!! While the collagen casings were a breeze to stuff, they dried to a papery texture which is not pleasant at all. I spent the better part of an hour removing them from over 80 individual links. That having been said, the meat inside the now removed casings is fantastic! As with all recipes, there are a few seasoning adjustments that I'll make for personal taste but the base recipe in the video description is darn good and will surely please a wide range of palates. I'll definitely be making these again but with sheep casings. Hopefully that will be the cure! (Yes, pun intended.) Thanks for a great sausage recipe!

Wow. Having just watched the 2022 version of this with the meat sticks made from prime brisket, and seeing your family loved them, this, the original effort making Pfefferbeisser and seeing the fam, gracefully sipping martinis and eating cheese and meat sticks wow! HOW COOL! Spectacular and interesting how different the two versions came out. Thanks for sharing both efforts!!

Awesome video! I just started making snack sticks but haven't tried using sheep casings yet. Hey one thing I do to make sure my stuffer stays seated while stuffing sausages is I use 2x quick grip c clamps and attach the base of the stuffer to my countertop or table. Merry Christmas!

Hungarian Scout sausage drop the mace and add allspice keep the paprika the garlic the white pepper the black pepper I add hot Hungarian paprika or red pepper flakes

there is also another kind of Pfefferbeisser in Germany with jalapeno and cheddar cheese. is made in the same way and seasoning it's great try it out

great work! you don`t have to keep casings in warm water overnight, 10-15min will work just fine.
