I love love this I will sure they it out, but please what's the right speed to use while mixing especially for cake batter. Using a stand mixer because I turn mine to speed three and use that all through. Does it have any effect on the batter texture and all?

It varies from Mixer to mixer so I can't really give a definite answer but work between slow to medium. If it's high/too high (for long,) it can cause overmixing resulting into a dense cake.

Thanks for the recipe. Does baking it for 40-45mins make it crunchy? I learnt and used recipes that bake for 15-17mins but I don't like the outcome as it doesn't make it crunchy. And I was thinking 40mins was too long but if it does make it crunchy and won't burn I'll try that out. Thanks

You're welcome. You have no worries. Just stick to the recipe as stated and all. Once baked, store in an airtight container.

Your normal Baking temperature is fine.
