Ingredients:
For the Patties:
4 grated boiled potatoes
100 grams paneer (cottage cheese) grated
2 finely chopped carrots (soak in lukewarm water before chopping, for soft texture)
1 finely chopped Capsicum
60 grams of boiled corn
60-70 grams of diced cheese for stuffing
1 tsp red chilli powder
½ tsp salt tsp coriander (dhania) powder
½ tsp dried mango (amchur) powder
Organoes (optional)
6-7 slices - bread crumbs (80 grams bread crumbs for binding and left over for coating)
2 tbsp refined flower
For Assembling the Burger:
Burger buns
Lettuce leaves
Sliced tomatoes
Sliced onions
Grated mozzarella cheese or cheese slices
Ketchup, mayonnaise, mint coriander chutney (sauce)
Instructions:
Prepare the Patties:
In a mixing bowl add grated potatoes, cottage cheese (paneer), grated carrots, corns, and diced cheese.
Add chilli powder, salt, coriander (dhaniya) powder, dried mango (amchur) powder, and Organoes (optional).
Mix the ingredients gently.
Divide the mixture into equal portions and shape them into patties, ensuring that they are the same size or slightly smaller than the burger buns.
Cook the Patties:
In a bowl, combine 2 tbsp of refined flour with enough water to make a thick slurry. Stir well to ensure there are no lumps. Take each pattie and dip it into the refined flour slurry, ensuring it is fully coated on all sides.
After dipping the pattie in the slurry, transfer it to a plate filled with breadcrumbs. Coat the patties evenly with breadcrumbs, pressing them onto the surface to ensure they stick. If you want a thicker coating, you can repeat the process.
Allow the coated patties to rest for a few minutes. This helps the coating set and adhere better during cooking.
Place the Kadhai on medium-high heat with oil.
Cook the patties for 5-7 minutes per side on medium flame until the colour changes to light brown. Adjust the cooking time based on your desired level of doneness or crispiness required.
Toast the Buns:
Cut the burger buns in half and lightly toast them on the tawa pan. This adds a nice crunch to the burger.
Sauces:
In one bowl add ketchup, and oregano and mix the mayo.
In another bowl add mint coriander sauce or chutney and mix it with mayo.
Assemble the Burger
Spread any one sauce on the bottom half of each bun. Place a lettuce leaf on the bottom half of each bun to prevent it from becoming soggy.
Place the cooked patty on top of the lettuce. Layer with cheese, tomatoes, onions, and other sauce on the top half of the bun.
Place the top half of the bun over the assembled ingredients to complete the burger.
Serve immediately and enjoy your homemade burger!
