I've been making bread with fresh milled whole wheat flour for a year. This video lead me to making the best bread to date. A couple of hints was using my kitchenaid mixer. And that a 5" x 9" bread pan holds 800g of dough. I'll share the recipe I used yesterday. 600g milled flour 300g bread flour (to improve rise and crumb) 900g or 2lb total flour (I often vary from 50% to 100% milled flour with good results) 635g or 2.75cups water (works out to 70% hydration, but focus on the dough just pulling away from the walls of the mixer) 17g salt (I use distilled water; tap water will want less salt. add to taste) 1-2 tablespoon yeast (they multiply until their food is exhausted so any amount will work out the same in the end) I use 0.5-1 teaspoon malt extract to hurry enzymatic break down, if I can't ferment the dough for 12 hours. I let the mixer knead with the dough hook for 5 minutes. Enzymes/fermenting will naturally make the bread sweeter. You can add a little honey or sugar as a cheat. Sugar will also make the bread brown better. This makes two 800g dough balls. I did four stretch and folds, waiting 20 minutes between. Then divided and formed the loaves and put in the pans. I let them rise until they seemed to stop (1.5 hours at my room temp). baked at 375F for just under 35 minutes and got amazing bread. Obv great taste, tight but soft crumb, and soft crust.

You only need to proof once? And did you need to cover the loaves while they double in size in the pans?

I have a new Bosch mixer, I’m just wondering why you only do a one rise for your bread….all my recipes say rise one hour then put into pan and rise until double then bake it.
