Whoopie pies (called the black moon by some) feature two moist chocolate cakes that sandwich a delicious marshmallow filling, forming a decadent yet simple treat/dessert.
The Whoopie pie filling is made without Fluff. All you need are some marshmallows!
Instructions for this easy to make Whoopie pie recipe is below:
1. Preheat the oven to 350F (177C)
2. Beat butter and sugars until it's light and fluffy
3. Add the egg and vanilla extract. mix until it's incorporated
4. Add cocoa powder, flour, baking soda and salt. mix until it's combined.
5. Add buttermilk and mix until a thick batter forms and there's no more pockets of flour. (see note below on how to make your own buttermilk)
6. Transfer the batter into a piping bag then pipe out bears on a lined baking sheet. Space the bears at least 1 inch apart. Dip your finger in water then gently press down on the batter to flatten and smoothen it out.
7. Bake for 13-15 minutes
8. Transfer the bears to a wire rack and let cool completely.
9. Place marshmallows in a bowl and microwave it at 10-20s intervals until it's melted. Place the melted marshmallow in a piping bag.
10. Turn half of the bears upside down and pipe the marshmallow filling. Top with another bear to create a sandwich.
11. Decorate the bears using your choice of candy, melted chocolate or royal icing.
note: HOW TO MAKE BUTTERMILK
1. mix 250g milk with 1 tbsp of vinegar or lemon juice then let it sit 5 minutes
