I followed this recipie and was very happy with the results. Color and clarity were great and was super happy with the result until about a week past back sweetening and bottling, I was putting labels on and noticed a bunch of new sediment in every bottle. Unsure of the cause since I used brand new washed and sanitized bottles and corks. The only thing I can think is something with the merlot grape concentrate I used to back sweeten. I hope that it isn’t ruined.

Hi, I’ve been making my own meads, wines and meads since I was 18-19 (53 now). Your wine isn’t ruined, don’t worry. This happens from time to time and there is more than one possible reason. One reason can indeed be the grape concentrate you used. It might have contained some fruit solids that have fallen out of suspension. Another reason might be that when siphoning your wine, you accidentally got a bit of the sediment. Especially with dark wines, it can be very hard to see this when it happens. Through the clear siphoning tube it might look clear but some might have come through and will have fallen out in the bottle. Not to worry, as your bottles are well sealed, your wine isn’t going to spoil. You followed the recipe exactly and that means it won’t re-ferment in the bottle. This means there is very little chance of off-flavours developing at this point. Let it age and then pour carefully to take as little sediment as possible to the glass. And even if you do, remember that it won’t harm you in any way. If people comment, tell them it’s natural, you didn’t use any finings… or don’t give them any more of that fabulous wine. 😊 One way to avoid this in the future is to let your wine sit in a carboy under airlock for a while (I allow for several weeks at least) after stabilising and back sweetening. Any solids in the sweetening agent of my choice (table sugar, brown sugar, juice concentrate, honey… etc) get the opportunity to fall out of suspension and the result is less sediment in the bottom of my bottles. It does take more patience, but it works. Should head space worry you: I always have a few small bottles of rather neutral wine, mead or cider at roughly the same alcohol content stashed away for topping up my fermenters after stabilising and hack sweetening. Either store bought, or home made. I just pick something compatible, top up my fermenter(s) and if there’s any left in that small bottle, it gets to be my drink of choice that evening. When I’m ready to bottle, I fill a few small ones again for topping up and for intermediate tastings (I get curious about how my brews develop). Always handy to have a few of those. 😊 Happy brewing and I hope your wine turns out to be as fabulous as you hope it will be… and even more.

I agree with the comment from the other user. The grape juice concentrate would have certainly had grape pulp in it. Next time you chose to back sweeten with juice of any kind then do so in the carboy and allow a sufficient amount of time for it to settle so you can rack it off. Also, do not attempt to move your carboy of wine for a few days prior to racking. No matter how careful you think you were you will most certainly put some of that sediment back into suspension. So after the specific gravity reaches 1.030, do you dump everything into another carboy or just siphon the pure wine? And second question is why move it to another container just to keep fermenting?

I think the reason you move it to a secondary fermenting vessel is to reduce the amount of head room in the vessel so there is less potential for oxygen. If you were to do your primary fermentation in a carboy, there would be less head room and it would likely bubble through the air lock because fermentation is more rigorous at this stage. So start in the bucket while it's bubbling like crazy, then move to carboy to finish it off. I hope this helps.

I'm going to be making this, I just finished my first batch of your "panty dropper" wine, and it's amazing as it sits at 10 weeks, I have a gallon of it and a couple bottles that are going to disappear in the basement for a year, I can only imagine how good it will be in a year if it tastes this good now.

Thanks for a very interesting article, here are some more tips for how to make wine… Use the right equipment. Things like plastic buckets and bins come in different grades of plastic. You must use the food-grade plastic products not the cheaper buckets you might use to clean the floor! If plastic buckets and bins start getting scratched and grazed, replace them. The grazes will start harbouring microbes and eventually you’ll have a spoilt batch of wine. If stirring the must (the initial mix of fruit and water etc.) in a bin, scald the spoon with boiling water first to quickly sterilise it. Fill and top up airlocks with cooled, boiled water - not straight from the tap. Avoid metal spoons and sieves with fermenting wine - i.e. after the yeast has been added. Sometimes they can taint the wine. Avoid wooden spoons, which are hard to sterilise - plastic is far better. Reusing wine bottles is fine, ask friends to save them for you and check with local clubs or restaurants who are often happy to give them to you. Wash out immediately as a clean bottle will be a lot easier to sterilise when you come to use them. Rack your wine to clear it before bottling. That is, using a syphon tube, suck up the wine from one demijohn into another leaving the sediment (called lees) behind. The tubes with a base and valve are cheap enough and a make this quicker. Allow the wine to settle for a week and repeat if necessary before bottling Never judge your wine by the taste as you bottle it. Most often you will think it is a disaster. Some wines can take 2 years to mature. As a general rule, perhaps try a bottle after six months. If it tastes harsh, leave the rest for at least another 5 or 6 months. Allow time. Time is the great wine maker and you should never be in a rush. We’ve made wine that was nnine months in the demijohn before bottling and drunk it 3 years later. The following year it was even better! (Reference: Pavas grape plan website )

My question for you is that in this video you mentioned using campden tablets, but you didn't use them when making the panty dropper wine, was there a reason for this? I've made a couple batches of the pantry dropper wine with no problems at all, turned out great. While making this wine its been sitting in the bucket for 4 days now without a single bubble coming from the yeast being added. In the video it said to put a lid on the bucket with an airlock, but in the description underneath it just says to cover it. Should I have just covered it with a towel instead of the lid, and is there a way to save this batch or is it just a wash???

I live in Minnesota, so it's frigid for over half the year. Would now, late April, be a good time to start something like this? I presume it would be ready about 15 months later so just in time for our really hot season. I'm asking because I'm assuming you need to keep this in a certain temperature window.

I'm having the same problem did enyone ever answer your questions or what did you end up doing? Strawberry and cherry wine bubbling just fine but the blueberry after 2 days still nothing and I'm using the same yeast so I know it's good.

I finally have some bubbling on my blueberry after 3 days so I found out that different fruit will ferment at different rates, cherry and grape concentrate hit 1.030 in 4 days and my blueberry is at 1.054 at 4 days so I still have some time left for the blueberry.

Camden tablets, acid blend, yeast stabilizers and pectic enzymes aren't necessary. Wine is made by sugar and yeast the rest is just chemical bs.
