Just ordered some tomato seeds! A trick w the eggs I learned and have proven is get the water to boiling then add eggs. Makes for perfect peel no matter how fresh! I was amazed but it has been working!

I like your aim of a year without going to a grocery store. It’s an eye opener. When my husband died; I did almost 2 years without money, hauled water from a neighbors place in a wagon, gathered sticks to cook and heat water each evening. It was hard but I was so grateful for all the stored food and a garden. You have a great helper, a good sized property, animals, great resources. By the way if you can beans without seasonings the somewhat thick juice can replace fresh eggs in a cake. 3 tablespoons = 1 egg in baking.

I don't think people realize how hard it can be for the widow or widower the first few years while they're trying to stay in their home on half, or less, of the income. I was a young widow and experienced major struggles too. Needs vs wants, food storage, and no debt need to be taught as priorities to young adults.

Most of my garden is planted with you all seeds because I learned to garden on this channel. And I am learning to can because of this channel. But first practice round was butter. And then quickly moved on to other things. I remember pulling out the first sealed jars. I was so excited. But bless his heart. I dont think I was even on his level of happy 😂

Well, Mr H., I was scared to pressure can until Mrs. H. explained what happens when you leave the canner on too long. She said the canner did it's scary thing (but didn't blow up), she turned off the stove, and went back to her nap while it cooled down. I had my pressure canner for years at that point and I finally decided it was time to get started. I think the first food I pressure canned was beans. I didn't see a lot of ways I could mess up canning beans....thanx very much to both of you for all of your help over the years in my quest to be more self-sufficient!

I went to the grocers this morning. Egg were $6.99 a dozen. It made me really appreciate my chickens(13 hens,1 rooster) and ducks( my son hides the duck eggs in the back of the fridge so he can eat all of them).

This was so satisfying. I love harmonization in the kitchen. It's hard to do even for people married for many years. It takes respect and wisdom to do it. After 2 bad falls and being crippled, I had to sell my flock of 16, 2 weeks ago. My chicken pen is downhill. I was so overwhelmed. I had no idea the situation with egg prices because I've not bought eggs in 3 yrs. I do hope to get more chickens, but I'll have to build. Actually, someone else will have to build a pen closer to my house in a flatter, closer area. I have 6 dozen from the flock I just sold. Love this video coverage. It's so informative and so hands-on. I do everything you and Mr. H did here, except i don't have a freeze dryer. I'm glad to see you made Cajun pickled eggs. I discovered how good they are when I got a 2lb bag of seasoning. Self-sufficiency is worth the effort. I'll buy farm fresh eggs from a friend until I get more chickens. Thanks for sharing this fun kitchen egg journey.

I got two sweet hens 2 years ago, and they have been great layers! Very sweet, friendly and affectionate. I get an average of 10-12 eggs a week with just two hens. Since I'm a single person household, it's fine for me. If I get more than I need in a week or two, I dehydrate some or share with friends. That doesn't happen often since I bake a lot, and I eat eggs often. It's been fun and saves me money! Oh they are sapphire gem breed.

I would love to have chickens, but where I live in Tennessee there are bears nearly every day in my yard more than likely there’s no way I could protect them. But I did go to the grocery store the other day and got egglands. Best eggs for $3.69 a dozen. I was ecstatic over that one so I bought four dozen.

2 Tablespoons of egg powder and 2 Tablespoons of water = 1 egg. We have had our freeze dryer for over three years we have freeze dried about 75 dozen eggs. We have a side by side refrigerator we have a shelf in that freezer works well to stack the freeze dryer trays with lids on. We put the tray in freezer fill with 1 1/2 dozen beaten eggs put lid on stack another tray repeat until all tray are fill with lids and we freeze our stuff 12 to 24 hours before putting in freeze dryer cuts down on freeze drying time, hoping to prolong the life of our freeze dryer and I don't have to carry full trays of liquids. We also added to our supply of powered milk by freeze drying some along with buying powdered milk, shelf stable milk and canned milk. We live in town so along with living in town we are too old to do more than some gardening. I watched lots of your videos when I started canning, my favorite recipe from you was pineapple jam and I don't really care for jams and jellies but I think I could eat that pineapple jam everyday on some hot biscuits. (but I might become huge so I limit that.lol)

This is how we do it too - we are older and trying hard to make ss stretch. Freeze drying ingredients, a few meals and milk and eggs. I always keep fdd starter etc. in case of an emergency. I've had my same fdr since 2017 - upgraded software but i try to can and freeze dry everything. For years we stopped canning but it makes sense to do it all - soups in jars makes for fast food!

You are the only channel I see that teaches us what we really need to be doing for what’s ahead. You guys are so knowledgeable & the only ones I have seen to help Us get ready ! I don’t need to learn how to bake cornbread when I need to be educated. . Your pickled eggs are perfect, where has it gotten us to listen to the government! The covid vaccine wasn’t tested properly or long & even when people began to have extreme side affects or worse, the government still told us get it! We didn’t & Thank you Jesus! Every homestead should be doing what you are doing. I know how to make pies!! Thank you so much.

Buff Orpingtons are on every list I've seen: large brown eggs, 2-300 per year, good disposition, tolerate cold, and dual purpose. On my list when I get a house 🐔

I had eastereggers early on wanted the egg colors - they were waste of feed, I got rid of them . They started laying fine, their first winter arrived and stopped laying. I got rid of them after about 10 months and no more eggs. They are hybrids,, as it turns out you may get a good mix, you may not.

I steam fresh eggs for 1 hour on low heat (propane). Then after 1 hour, I take them straight into an ice water bath until cool to the touch. Refrigerate them overnight. They peel as easy can be the next day, nice and smooth.

I use my freeze dried eggs in baking all the time. I also use them for scrambled eggs, french toast, and any egg recipe where you need a whole egg.

I love Mr H. learning to can! You are a great teacher and you teaching him is a very effective way to show others. I water glassed eggs last fall for the first time. My question is, "How do you use them?" Im a little scared of them.

Mrs H to peel your farm fresh eggs easy and i mean easy. The trick is not to boil them . Steam them instead. I put mine in a strainer over a pot of boiling water with a lid on them for 15 min. Then into cool water the peels slide right off. Even and egg laid that day will peel easy. Try it .
