bruschetta (broos-ket-ta) is the toasted/burned bread slice not the tomatoes.... a lot of toppings can constitute bruschetta, even just garlic and oil

Just a note on the green tomatoes..tomatoes in the supermarkets taste like disappointment because they don't allow them to blush before picking. If you want to ripen off the vine, make sure they blush a little before picking to release the chemical that makes them taste good. Otherwise, they may taste superior to the store but still not as flavorful as they could be.

Me too. For a FIRST year garden, she really did great and the abundance of it is awesome. She had what 3-4 years of gardening under her belt so KNEW what to do for new soil and,, it’s kinda like when you make bread, you KNOW how that SHOULD feel while kneading it - same as the mud 👍. One notices little things that irk you about your soil. I’ve been gardening 38 years - and honestly, ID I’m one of those that getting old puts you in a care home, should I ever go missing they’ll find me in THE nearest garden 😄😄😄

Hi Becky & friends, I use to can over 188 quarts of tomatoes every year. Raw packed whole tomatoes. Spaghetti sauce, stewed tomatoes, sauce, paste, and juice. Nothing went to waste. The possibilities are endless. Happy canning!😊

I just buy my red sauces at the store. We really use less than 15 jars of red sauce a year. But def. if we ate a ton of it it would so be worth canning it.

The water bath canners aren't in "our pantry" 😂 asking because you know we all watch every Becky video and I thought when we cleaned/organize the pantry they were on the bottom shelf. Man I hope we find them we are in canning season. Lol love you Becky

I add a pint of chunk pineapple and pork meatballs to the Asian plum sauce and it makes a super quick sweet and sour meatballs in the crock pot! The Family loves it

Costco sometimes sells garden wagons with wheels that folds up. It will allow you to bring 4 or 5 baskets down to the garden and make it easier to bring it up to the house

I love what you have accomplished. I love the new paint color. I think you may want to put something on the completely blank walls. I would love to see a picture of your fabulous lovely chickens. I think a great picture of them running to you when you are feeding them would be spectacular. I will say if it were me, I wouldn't want to be included in the picture. but your chickens are adorable. I don't have chickens, but I do have 6 grandchildren and a grumpy cat, and that is how I have decorated my walls. I love what you do.

I'm so impressed by your 1st-year harvest on the new homestead! Those plum tomatoes look amazing and sooooo plentiful! I was sad that I didn't find any poblano pepper plants this year; last year I grew tons of them.

Hey my friends, I just wanted you to know that Harvest-Right is having a special thing where if you contact them; they will send you a new inside of your freeze drier to change it from 4 to 5 shelves, and they even supply the additional tray. We have cold packed tomatoes for years. I found they are fresher and hold their texture so much better being cold packed. Of course they are blanched to help the peeling process.

Hi Becky! Have you considered adding vermicomposting to your homestead? Having a big compost pile has not been an option for me, and vermicomposting is easy, and mess free!

Living Traditions Homestead used a silicone insert in the freeze dryer for making cubes of tomato puree concentrate. Reminded me of the garlic pucks you made. Also if you have the Harvest brand, there's an kit to expand the freeze dryer from 4 to 5 trays. 🥰

My mom always freezes extra cherry tomatoes and then throws a handful in chili, makes tomato soup and fresh pasta sauce in the winter with them. Such a delight to get a lovely burst of fresh cherry tomato flavor in her chili!

Ideas where your water bath canner MIGHT BE, #1 above your wall oven cabinet #2 in your pantry either top shelf or bottom shelf. I remember seeing you move it out of the way #3 maybe in the grow room?

As we are not from the U.S I thought for your next video it will be worth while to explain the difference between the crock pot, instant pot etc because we don't use them here and I had to google it to understand the differences. Crockpot is an American brand name for a slow cooker and instant pot is a brand name for an electric pressure cooker. However slow cookers and pressure cookers have been around for absolutely decades and decades in countries worldwide. Yes they were put on the backburner after the invention of the microwave in everyone's homes but whats old became new again when the electric pressure cooker became a thing (&much safer than the manual old style). Americans just love their brand names for everything, like kleenex for tissues!

I recommend cold packing for diced tomatoes. I find that they hold their structure better that way. They do shrink considerably during the canning process, so fill them all the way to the brim when filling the jars. That way, you won’t have an excess of headspace after they’re processed.

I froze cherry tomato last year for roasted pasta worked well. This year what we thought was cherry tomato turned out to be a very prolific paste tomato. We are going to save seeds to see if we can get it to grow next year. The plant was a gift from a friend. She thought it was a cherry plant. She started it from seed.

I totally prefer steam canning over water bath because it's how my mom cans and how I learned to can. I cold pack tomatoes. If you have so many tomatoes that you want to change things up, my favorite canned tomatoes is Italian diced tomatoes, so yummy!

Becky you can use canning rings on the bottom of your stock pot to get the jars off the bottom of the pot. I’ve canned diced tomatoes both using hot and cold packing. They have a different taste. The hot pack has a more cooked flavor, so you’re right that you need to do both to fine your personal tastes. I liked the cooked for heavier sauces and soups and the cold pack for a lighter tasting sauces.

Hi, I really don't know where you peaked this recipe from, but bruschetta is not a soucs, It's roasted bread (pane bruscato) with something spread on top: tomatoes, peppers, pesto, actually whatever you want. If you choose tomatoes, the nice thing is to eat fresh raw cubed tomatos. What you cannen is a sort of souce, it's not a bruschetta. I don't want to bother you, but I know you like to learn new things, that's why I left this comment. Bye 😀

You don't need a special steam canner. Add a rack to your 30 quart stock pot, then add 2 to 3 3 inches of water. Bring it to a boil, then add your jars and cover with the lid. Start timing once you see steam coming out of the lid, start your timing for your elevation. It's usually the same amount of time as it is for water bath canning. Rose red homestead's KZbin series on steam canning. She's a science based professor and brings her skill set to food preservation.

Becky that bruschetta in a jar recipe calls for half pints. Those looked like pint jars. It’s not safe to deviate like that and put it in a larger jar. The recipe was only tested for 20 minutes in half pints.

Just harvested tons and tons of my Roma and SanMarzano tomatoes. I just twist the tomato on the vine itself when harvesting and never have to waste any time removing the green sepals after separating the tomatoes from the plant.

I love your channel. I've got way more weeds and it's a lot messier - maybe like your last year when you couldn't be out there often - but my bounty looks like it will be similar when it comes to peppers and tomatoes! I always love your recipes as well. I was not successful with squash, cucumbers (had enough for two jars of pickles), or onions YET. I always tag that word to the end of my sentences because I know I'll get better and learn from this and eventually I will be successful. It makes me feel able to not say I've failed. Anyhow, thanks for being you and sharing your knowledge. It helps us new gardeners!

I also do a garlic tomato (just added garlic) and a stewed tomato with celery and onion. I use my Immersion blender if I want a smooth sauce when I open the jar.

For the celery n onion tomato one do you water bath or pressure can it?

@kittiecatticus8150 I waterbathed, but I didn't have a lot of celery and onion it was mainly tomatoes. Just a bit to add to chili or soup.

Hi Becky, it's almost spring here in South Africa, but I made bruschetta at the end of summer this year from the Ball Canning book you recommended and it's delicious. I plan to utilize this canning book way more this year. Thanks for introducing me to the canning book. Had to order from America but it is totally worth it

I think you put your water bath canners under the counter in your walk-in pantry. Pull out the cupboards underneath the counter and see.❤ PS... you don't need to buy a separate steam canner. Any large pot will boil water and create steam. Just get a few racks too raise the jars up a bit and use the pot you're using. See RoseRed Homestead for the info.😊

So you were standing stirring that plum sauce with that jar of basil in your other hand and I'm like, oh, no Becky, don't do it! don't do it! I even quickly thought I'd do a comment of "does anyone get paranoid when Becky is cooking two things and you know if it was you you'd mix them up and throw things in willy nilly?" Then you almost did and I literally screamed NO!!!! lol I'm so glad you didn't toss a cup of basil in the plum sauce. :)

yep...once I was making a pumpkin bread from scratch (hollowed out a HUGE pumpkin) and didn't realize the page blew over to the spiced bread and ended up mixing the 2 recipes....it was still delicious but when I noticed I had already put them in the oven....UGH!

I tried the freezer salsa and we love it. I actually haven't thawed any to eat, but before freezing it........the roasted veggies added a great extra flavor.

My grandma used to take the tops off tomatoes after dinner in a large bowl on her lap in the den. That way she could be with family and get that done at the same time!

Another idea for using abundance of tomatoes: By the same principal of roasted salsa: In an oven safe dish place tomatoes cut to half or quarter, along with cut onions and 2 heads of garlic (tops off). You could also add some cut bell peppers or some carrots…Drizzle with olive oil and season with salt and pepper. Roast in oven and then place in the Vitamix. Blend until smooth and slowly add Coconut milk or broth until reaching the desired soup consistency. You can add some Basil leaves or a spoon of Pesto… And if you really want to go over the top, add a can of chickpeas (but don’t blend them in the Vitamix, just leave them whole). Best tomato soup EVER! I don’t know about canning it, but it’s a great recipe. I hope you like it.

Becky, I’m concerned that your jars were too big to get the raw tomatoes heated through in your bruschetta. The recipe calls for 8 ounce jars.

Hey Becky, I have an idea for that pulp that was left over from making the plum hot sauce. How about making flavor cubes and freezing them. There are little silicone molds in the canning sections (Walmart used to carry them for herbs) but the silicone candy molds in the Walmart candy making section would also do in a pinch. (The area that has the candy melts, candy tools, fondant, Wilton cake pans, etc.) Those flavor cubes could be useful in a lot of recipes!

Also Bruscetta is best when the bread is grilled with olive oil and rubbed with garlic post grilling. The canned Bruscetta Sauce is great on chicken thighs or breaststroke cooked in an instant pit and a half a block or cream cheese😊.

I’ve been preserving most of my Roma tomatoes this year as diced tomatoes and I used the method from the ball book where you just put the diced tomatoes in a jar on their own and they naturally release their own juice during the canning process. You do have to process them for 85 minutes then, but I recently tried a can and they came out really well! I didn’t peel the tomatoes either and the texture didn’t bother anyone in my family.

I've canned diced tomatoes both ways and prefer the hot pack method because you can fit more in. If you are going to water bath they really do hold up well in the jars.

I prefer cold pack tomatoes and then pressure can - the National Center for Home Food Preservation gives instructions.

My sister slices her cherry tomatoes in half then freezes them. She drops a handful or so into a chicken and rice dish she makes. They don't even need blanching for texture! It's a great time saver for processing and cooking. She also does diced onions.

Becky save the tomatillo husk in the freezer if you make tamales you boil these with salt and add to your masa and it makes it really fluffy. This was what my abuelita always did and the one year she didn't the cooked masa had a different texture more dense. Add it to your pork or beef water. It is amazing!!

I use my food sealer for future meals. So instead of weekly you can go monthly or every 6 months just label as YOU know seal in a casserole dish then take out of the freezer and then seal in a sealer bag. Less space in a Freezer and longer lasting. Yes 1 more step but longer lasting.

Hi Becky, my grammy and my mom always cold packed our tomatoes. We would just blanch them to remove the peel. But my great grandmother said that canning tomatoescold packed was better for not only texture but flavor. I have done both,and i like the quality and product better cold packing them. Hope that helps. The only time we would do a hot packing is when we would make marinara sauce or chili sauces.

I'm a bit confused by the concept of canning the tomatoes for bruschetta (pronounced brusketta btw!!) , because here in Italy "bruschetta al pomodoro" is made with raw ingredients... Just tomatoes which are diced small, basil leaves, salt and extra virgin olive oil... Still, it's kind of interesting to see this take on it, and it's always a pleasure catching up with you Becky!
