I do a lot of stocking up and prepping too as I am disabled and live in upstate New York where we have long beautiful winters. Some tell me it’s hoarding but I look at it as being prepared and I use what I stock up on. I care for my mom with Alzheimer’s and make her meals too. It’s difficult being disabled and going to stores all the time and trying to carry things and keep her safely with me. I grow my own herbs and use them all winter too and that helps. I used to make then freeze cookie dough. When folks dropped in, planned or unplanned, i would put a tray (or few) into the oven. It was, quick, easy, and made things smell nice. But over all, it was cheaper than ready-made goodies from the grocery store which may or may not get eaten from the pantry shelf.

@@laurakuehlke1320 i don't know about all of the nut flours but we were able to get a grocery shelf bread there for a while made with some hazelnut flour (have no idea what ratio) and it worked well with respectmto blood glucose levels. If you can find rolled spelt (looks like rolled oats) it can, not always, do better than oatmeal.
