Hominy Corn Porridge is a fairly popular and favourite porridge of many Jamaicans. Don't take my word for it, try the recipe and see if it suits your particular taste.
INGREDIENTS
1 cup Hominy Corn (soaked overnight in 2 cups water)
7 cups Water
1 tbsp Vanilla
3 tbsp Brown Sugar (more if you want a sweeter porridge)
1 tsp Cinnamon
1/4 tsp Mixed Spice
1/4 tsp Nutmeg
1/2 cup Coconut milk + 1/2 cup Almond Milk (or substitute milk of your choice)
1/3 cup Oats
DIRECTIONS:
1. Soak Hominy corn overnight in about 3 cups water
2. In the morning, combine Hominy Corn, Vanilla, 1tbsp Sugar, ½ tsp Cinnamon and ¼ tsp Mixed Spice in 7 cups of water
3. Boil for 1 ½ hrs (or 40 minutes in a pressure cooker)
4. Corn should be tender when finished
5. In a blender, combine Oats, Coconut Milk, Almond Milk, ½ tsp Cinnamon and ¼ tsp Nutmeg. Blend well.
6. Add milk mixture to corn
7. Add 2 tbsp sugar (or sweeten to your liking)
8. Stir well to avoid burning
9. Simmer for 5-7 minutes
