Why are the skid plates plastic?

High strength high impact. Aluminum will deform if hit hard enough, this just bounces back. It’s also nice and smooth over rocks.

I am not a fan of drilling any holes in the frame

There aren't many aftermarket skid plates that offer maximum coverage without having to drill some holes in the frame.

If you did not like the self tapping screws rivnuts would be a way to use a regular bolts.
