Hi chef I am a working professional, born brought up and living in Delhi. Infact for last 7 generations. I am now 50+ but I still remember the days when my mother use to cook me this roti and it was always paired with Rajasthani khadi. I dont know why, since i never asked her. the combination was good and U dont ask your mother why she uses specific combination of food. You grow upon them and you say " Maa, aaj kuba roti banaogi". Unfortunatelyshe died in 2003 but she instilled in me a sense of taste, recognition of spices, their combinations and what not. I find cooking to be relaxing and therapeutic. I cook... period! for fun as well as sustainainnce. I try to learn and cook new dishes, Thanks to you and your likes. I have fed my family some of your fabulous tasting dishes.
