Do you only score / present one side? What happens to the side that’s face done? Does it get burnt on the grates or is it ok?

You can do the whole ham for sure or go around a bit further. It doesn’t get burnt as long as you keep your temps stable.

I didn’t want to go through brining/curing myself. Buying a pre smoked and is always a good option and adding a double smoke of cherry gives it some extra flavour too.
