I am only just beginning to enjoy the art and craft of cooking having been given a membership of MasterClass by your daughter for Christmas 2020. Henry Keller is my hero!. I am not really a baker. I prefer to cook meat, fish and vegetables. Your Gammon joint turned out very well indeed but I had to reduce the roasting time to 45mins as the juices had all hardened on the bottom. I little bit of water revived the ashes a little but the crackling was "rett good" and joint was still wonderfully moist. I am looking at cooking mussels next week with a variation on mariniere and then devilled kidneys with saffron later in the week. You have lifted my budding culinary enthusiasm - even if I am 82 years old.

I always boil mine the night before. When it's sitting overnight I cut up some mandarin oranges and layer them on top with toothpicks. Really leaves a lovely flavour. I find with a gammon there are quite a number of variations you can do with the glaze, but this is the tried and trusted classic right here

John, I made your gammon recipe today for friends and it was such a success! I wasn’t able to settle the whole thing into water so I had it simmering after boiling, and in the last 30 mins, I flipped it over. I used your basting recipe and it was gorgeous. My wife, who doesn’t like gammon, apparently managed four slices. Lovely. Thank you so much. Much love from South Africa.

@@JohnKirkwoodProFoodHomemade I have a great Coleslaw recipe to serve with baked ham, holidays or anytime. Make standard American restaurant slaw, (Chopped cabbage, a little graded carrot, just a finely bit of chopped onion 1 teaspoon, to taste, optional with this recipe), to diced cabbage add (little vinegar, or lemon juice, pinch of sugar, Mayo, and 2 Tablespoons cold milk. Mix up and add (Just Trust me, it will be so amazing, add 1/2 Cup of Dark Raisins, put them in the slaw and then, Roast a tray of broken Walnuts, when cooled add at least as many Roasted Walnuts to the slaw. Cover and refrigerate at least 6 - 8 hours. Serve cold with Ham or Fried Chicken. You can add fresh chopped broccoli and make it your own but please try this and ENJOY it is Fabulous. Honey & Mustard Roast Ham is a new thing for my family, we tried that for the first time for the 2020 Christmas and this recipe. To be honest, that is a totally different type of food we eat in Croatia for Christmas, and a combination of sweet, salty, and mustard is a combination that does not exist there. On the meat I mean, but we live now in Scotland and after we tried this we will never stop cooking this and by this recipe. Well done we love it. P.S. We cook this more than 7 or 8 times in a year...well who doesn't love Christmas so many times in the same year 😁😁😁😁

Christmas in August? No, but just cooked this ham John got 6 visitors coming for a couple of days and the most economical way of buying ham for a few people. I can tell you I have been cooking a ham for a good number of years and more luck than by judgement they have been ok. But… this is another level it is amazing soooo delicious thank you. You are my go to each time for recipes no nonsense ingredients most are store cupboard. For the keen but not brilliant cook this is ideal. Keep em coming John thank you.

The glaze I use is wholegrain mustard, marmalade,LOTS of black pepper and a dash of honey rum. Whilst boiling I have a stick of cinnamon and a star anise in the water. I find it builds depths of flavour, sweet a little hot.

John, you are a hero to me! My housemate and I are spending Christmas together rather than with family due to Covid. I've cooked turkey in previous years, but my aunt always used to bring the gammon. This is exactly how we make our ham at Christmas John with one little change. We got rid of the cloves studding years ago but now add 1 tsp of ground clove to the glaze mixture instead. Same amazing flavour without all the sticky studding, and you never break someones tooth! Oh, we also use a smoked gammon, but thats always a personal taste preference I guess. Cheers John. As a Brit ex-pat I’ve started home curing pork. I just took an 11lb gammon out of brine read for Christmas. Taking half for gammon steaks and the rest for Boxing Day ham. I used this video while cooking a ham for first time . Only difference was in ingredients ,I used honey and a Ballymaloe ham glaze which contains mustard . Turned out really good ,followed instructions as described exactly .

My, my, my such a wonderfully prepared ham! My family recipe is similar in that we simmer the ham in 3 quarts of sweet cider for two hours before baking. Also, we make a thick paste of 1 cup of maple sugar, 1 teaspoon Coleman's dry mustard, and 1/2 teaspoon powdered cloves. It makes for a thin sweet crust. Personally, I prefer ham cold... thinly sliced on homemade bread and, if any is left, diced and incorporated into a ham loaf.

I often put a few aromatics in the pan whilst it boils. A roughly chopped onion, garlic, cardomom pods, cloves bay leaf etc. Gives it a good depth of flavour.

My mother prepared ham much the same way, but without the honey, and packed brown sugar, dry, all over it. Formed a delicious, slightly crunchy coating that was the very best part of the whole ham!

I've just covered it in your honey mustard mix, put the cloves in and it's now in the oven ready for the next few days its smells wonderful, I did make one difference I only did two tea spoons of honey and then added a spoonful of Maple syrup, my partner did the taste test said it was ok, hmmm so I added a little more english mustard and a little sugar as I'd been light on the sugar as I'd added the maple syrup, anyway after the new adds got him to try it again and it got the thumbs up, so just waiting now. Tomorrow is Christmas of 2022. I’m in Texas. I’ve never seen a pork ham cooked like that but it certainly looks delicious. Here where I live we call the skin pork rinds but they fry them up and sell them in convenience stores, all flavors. Thank you for your video and Merry Christmas.

For my famous Christmas ham I like to use Lyle's black treacle, finely chopped jalapeno, cinnamon, nutmeg, clove, mace, black pepper, Worcester sauce, star anise and the rind & juice of a clementine. It goes down an absolute bomb with some fresh crusty bread and butter at a buffet or in your snap for work!

Nice tip about the oily spoon for taking the honey! A similar trick is to use a drop or two of oil in the water that you use to boil pasta, then foam will not form on the surface of the water and go all over the place due to overboiling.

Hi John, again a lovely informative, (not to mention mouth-watering), video. I cook my gammon similar to your recipe, except that I substitute cider for water when the joint goes in the oven. I previously boil up then simmer the joint with cider / water mix, and then add chopped onion and four star anise. Keep up the grand work.

Hi John I just did this today and it came out perfectly and I've never made a glazed gammon in my life I also successfully made some crackling..the joint has been in the fridge a while now and I just had some and some how it's even better. use the juice to make peas pudding, add your split peas, a pound of butter ( country life is best) simmer slowly, add a bit of garlic, mustard, to taste yummy!!!

Yes, Australian Ham is ready to eat when you buy it but I often bake it anyway with pineapple layered on top and mustard /honey glaze. I have never done crackling that way and am definitely going to try that!
