Sure gonna make this. Looks amazing! I'm making my french fries in a similar way: bringing the (russet) potatoes to a boil (from cold) in saltet water. (Some vinegar in the water will create an evern rougher exterior.) Double deep fry. About the cold water: I learned that rule from Poppy cooks (All mentioned names are channel names on YT.): you wanna cook everything growing underground starting with cold water. Everything above the ground in hot water. Never used a starch mixture on fries before. My best bet so far comes from Chef John (Food Wishes on YT) about his "crispy onion rings recipe": 70g all purpose flour/35g corn starch and 2 tbsp potato dumpling powder with water. The dumpling powder brand is Pfanni, here in Germany, Panni in the US. I don't know about the UK. For onion rings: some spices in the batter do no harm! I once shared that idea with Chef Harpal Singh Sokhi from India and he liked that idea. Talking honey: you might like a recipe from CALLEkocht: green asparagus, cooked in just honey with some red chili and garlic. Greetings from the far north of Germany!

Thank you! Please share how it turns out. I didn't know that about vegetables that grow over and under ground so thanks for sharing that with me. I will definitely give it a try. I learned the potato starch technique from Lucas Sin who made a North Eastern Chinese sweet and sour pork with this batter and it turned out so crispy. I've also seen it used in Korean Fried Chicken and I figured it might work well in this application. That asparagus recipe sounds delicious. It'd make a lovely side for Thanksgiving which is coming up so soon here in the US. In India, they also make this recipe with lotus stem for a healthier option.
