Oh my god! Hoon your show is so much useful to me. Last week, I bought used Miss Silvia in Craig. I just wanted to little bit better coffee experience while I used with Breville Express Barista. But, the Rancilio instruction book is not nice & confusing + frustration because some other video mentioned so much times burn up the boiler without water. So, I just waited your Rancilio Was came. Finally, I tried my machine today and followed steps which as you showed in KZbin. One by one.. step by step.. with my tv remote. oh my god!! Another coffee haven & milk texture, and much lighter flavor than Breville. The procedure with Rancilio was not supported by like Breville & much more thinking & guessing point . but,, the flavor.. milk texture was just cloud & flavor was difference than old one. Even,it was paid with it without PID. The experience was like riding bike. Breville is a bike which has training wheels. It is secure and still fun. But, without the wheels, much freely and having great enjoyment also having risk which have sour and bitter shots or burning finger. Now, I bet on Rancilio. 🤩 wow, it was really nice experience. ( mine is old, so, it has some different buttons features though) & thank so much for your show.!!!

It gets hot on the cup warmer. Be careful that plastic can bake on and make it very difficult to remove later. You would be better to cover it with something else after removing the plastic.

I have both the Niche and Sylvia (black) and it make for a great set-up. I added the PID (Auber) and pulling a shot is a lot easier (just being able to see the boiler temp is worth the add). Pre-infusion and timed pull helps bridge the difference with the more automated machines. One word of advice: put the Sylvia to the right of the Niche. With the steam wand on that side, having a little extra room makes for a lot less cramped frothing experience.

:) you’ll get used to the steaming quickly. One tip, after steaming when refilling the boiler, turn on the middle water button before you open the steam wand until you hear the sound change then open steam wand for just water to purge/refill boiler. Much cleaner

When you milk transfer, always transfer into a warmed pitcher. Warmed your pitcher with the initial first bit of steam you blast off. If you want to get used to the difference in steam power you can practice with just water, a splash of soap if you want to get your milk stretching and texturing down

Haha... Silvia steam is ok. Purge boiler more for drier steam too. Proper routine is drain some into cup while it's heating up, then when ready purge some into towel. Then you get very nice dry and hot steam. Also get shallow bowl for rinsing portafilter and flushing, unless you want to clean drip tray once a day. Good luck with temperature surfing too.... Wonder how long will you resist the Pid upgrade 😏

@@HoonsCoffee you are welcome 🤗 Silvia and I been together for over a decade. The other tip for cup warmer, I use drawer liner cut to fit. Just find one with holes in it so cups still get warm. Another thing to do is to fetch brass flathead m5 screw from hardware store to replace shower screen bolt (if they still use it in latest versions) otherwise you might notice an indent from it when updosing. And blind 58mm portafilter is a must too, unlike smaller breville she is unforgivable for poor puck prep 😏

I know the feel. I kept the refrigerator’s water dispenser panel plastic for a long time. So. No scratches ~ no flaw for new things.

Breville Dual boiler is about $700usd in Australia. Great value during this season. I am struggling with shot consistency on 58mm basket. Coming from 51mm, it’s a huge upgrade for me.

In Italy, brew ratio is 3.5 to 1. 7 grams of coffee for 25 ml. Water. That is the reason for the 14gr. Double basket!

@@gabrielevinci Just read the link. Thanks for sharing. However what the article and you fail to mention is the extraction time. Is it the same for all ratios thereby making the grind size the method of controlling output or do they (Italy) use flow rate, extraction time or both to control output?

@@gabrielevinci thanks. But the link you posted still doesn't suggest that time is in any way a factor to consider. It sounds like in the end it's all very subjective and the "rules" are only there as guides. As such it is much more a subjective art than a hard science since the typical caveat is always "taste". In other words 2+2=4 unless that doesn't appeal to your taste then 2+2 can be 5. So why try to make it a science? Is it to sell gadgets to help you adhere to some orbitrary rules that ultimately don't matter?

@@gabrielevinci the article you are referring to specifies as a normal espresso as 3 to 1 which is what I said. when I say traditional italian brew ratio, I am talking about coffee*s 2nd wave, the 1960s to the mid1980s period. my family, from napoli, includes baristas, roasters and serious aficionados. my wife*s cousin brought bags of his own coffee from torino, thinking we don*t have decent coffee in canada.

@@gabrielevinci I contend that in a process where small differences seem to matter eg 18 vs 17.5 grams, that to say somewhere between 20-30 seconds is very big range and not very precise. Taste of the product will vary greatly over the course of 10 seconds. A relatively lot of liquid (tds) will pass in 10 seconds. Wouldn't you agree? It could be the difference of 1 to 10 grams of liquid which would change the ratio considerably. For example 18g in to 35g out is 1:1.9 where as 45g out is 1:2,5. Where on the espresso definition chart is 1:1.9 and where is 1:2,5?

No pre-infusion unless pid is used. If you try without pid, the 3 way solenoid will just try and dump the water when you switch off pump.

You lose PID, pre infusion, timed extraction, larger water reservoir, larger drip tray, pressure gauge and only gained a 58mm portafilter. BBE is easily a top appliance the Silvia is an entry level machine. Based on cost and 58mm portafilter I don't think it is an upgrade. I think the Silvia is cheaper than the BBE in Europe ATM.

I am still covering my second time ivory couch with full cover size blanket instead plastic to protect from my kids. ( the first one with die with so much flaw) If I have plastic covered couch, I will maybe 🤔 I know the feel , so..

That's how it is supposed to be, the 58 mm is not as tall as the 54mm that the breville comes with, the breville made the 54 to make it easier for beginners if there's channeling/imperfections in the puck. Imperfections like channeling are more prominent and affect it more per say on a thinner puck

Hey there Hoon! As i'm watching this video i am drinking my perfect latte from Breville Barista express and i am wondering "Why do i need to switch from BBE to RS???? I would like to hear from you all the pros and cons BBE=pros BBE=cons RS=pros RS=cons I have my BBE for almost 4 years (in January) and never had problems so far (and we have hard water)....I really don't feel like struggling with my espresso shots and besides RS costs more then i paid for my BBE ($500). Hope BBE will last few more years.......Cheers buddy!

What’s your opinion on the Rocket Giotto type R? Someone offered it to me for $1,995. It retails for $2,600. It’d be my first machine but it looks like a beast of an HX machine.

It's not that 57 sec is too long it's that the output wasn't enough. You should have gotten a lungo 1:6 or 1:7 for a caffe espresso.

I am curious why you say Rancilio will make better espresso than Breville barista express? IMHO the barista makes the coffee not the machine just like the photographer makes the picture not the camera. The equipment just adds functionality. Golfers have a saying "buying expensive putter isn't going to make you a better golfer".

Is Rancilio Silva not a semi-automatic? You have to stop the extraction manually? There is no programming? If that's case I'd rather have machine with lever to pull shot. It looks better and is way cooler. Isn't the IMS basket marked with dose? This is painful watching you try to use this machine. Honestly, its not that I don't enjoy the dialing in process it's just that sometimes you don't complete a thought before you interrupt yourself with another thought. Also, another thing, READ THE MANUAL!
