We had family that lived so far out into the country that they truly only can't 3 into town to grocery shop every couple of months. They raised their own meat animals, vegetables, and fruits. Oh and even though they were very comfortable because of their frugal lifestyle and my great uncles pension, my great aunt didn't have a phone in her home. Still if we gathered at my grannies they would show up with a lot of that yumminess they grew and canned. Oh and the other set of them that lived in the other direction, same situation, would show up too. I used to accuse granny of sending smoke signals. 😊

There's a version of this recipe without the cheese whiz and with green olives that goes in a thin layer inside of a flower tortilla which is then rolled and cut to make pinwheels that's actually good. I have no idea where the cheese was and the cooking came from😂

You're suppose to soak the dried beef in water for 24 hrs. Change water every 8 hrs. Never ever forget this step. Or you'll be throwing whatever you make with it out. It's a must to get as much salt as you can out first. That's the way my Grandma taught me. I've never tried dried beef without soaking first. And after seeing your demonstration. I'm no longer wondering what it'd be like if I just used it straight from the jar without soaking.😂😂😂Thank you for sharing😊

When I use it, I dont soak it, as its going in a dip with sour cream and cream cheese, so the salt gets dispersed pretty well

Once we were driving home from Yosemite and stopped at a shitty diner by Lake Mono. My husband ordered Hot Beef and the waitress said, “Are you sure?” He should have taken her hint and picked something else because their version of Hot Beef was microwaved Carl Buddig lunch meat and soggy wonder bread with a little clumpy gravy. We decided Nicely’s needs some merch that says something like, “I survived lunch at Nicely’s.”

That doesn't sound as much like the recipe in the clip but more like the WW2 field ration dish of "Shit On A Shingle". Basically toast with a gravy with gravy containing dried beef. It's not too bad if made with bacon or ground beef as a quick pasta sauce though since you're basically just making bechamel.

Spray and cheese are two words that should never be seen next to each other in any way. The concept of cheese wiz isn’t disgusting to me, as I worked at a cheese making factory and saw where that weird cheese paste comes from, but the amount of modifications you must make to that paste to, 1:stop sticking to everything 2:not rot at room temperature for extended periods of time 3:making it sprayable For anyone wondering where that cheese paste comes from, after making the cheese cutting the curds and everything, the liquid that is left (at least where I worked at) was pumped into a holding tank, over time (hours) a smooth but incredibly sticky cheese paste would float to the top. What they did to it after that I don’t know, that was day shift’s job.

@@arsenicflask it’s probably the same cheese paste melted and poured into a sheet then cut. If the store bought stuff grosses you out you can make your own cheese wiz at home with two simple ingredients and cheese, you need citric acid or lemon/lime juice and sodium bicarbonate mix them with each other and it will make sodium citrate which is an emulsifier and will help your cheese sauce and other cheese based stuff stay well mixed and not separate. I only know how to do it in theory though I haven’t tried it myself nor did I ever see a recipe but it doesn’t sound to hard to do.

In my family we have a similar recipe. We just call it beef dip and my mom makes it for Christmas and serves it with rye bread. She doesn't add olives though and does half sour cream half cream cheese and adds chopped onion. It's actually so delicious!

There's a dish called Shit on a Shingle that uses that dried beef in the gravy, and whenever my mom used to make it she would literally BOIL the slices before chopping them up to remove as much of the egregious salt content as possible. It's WILD that something like that is still in the shelves, it reminds me of Civil War recreation day, should be with the hard tack.

Tbh boiling certain cured meats to remove salt content isn't that alien of a concept. My mom used to do that to the ham she'd buy so you'd be able to taste the maple and/or beer she'd use to cook the piece in. You can also soak certain meats like fish too to rehydrate and reduce the salt content, although now with how easy it is to keep fish fresh or frozen for transport, you don't really do this anymore.

Shit on a Shingle is what people in the military call it. Its civilian name is "Creamed Chipped Beef". The "shingle" is a piece of toast, the "shit" is all the "creamed chipped beef". To be honest, Stouffers makes a Creamed Chipped Beef that I used to eat intentionally.

This is a lot like a family-specific recipe for "Bugle Dip" we used to make. That was sour cream, cream cheese, Worcestershire, garlic and onion powder, a little bit of mayo, and Buddig Beef, which was effectively just un-dried beef, served with the titular conical corn chips. It went over really well at parties and functions through the like mid-2000s, though I think it's been over a decade since we've made it. The cheese spray on this thing is egregious to me, as a result.

We used to make a version of this in Texas back in the early '80s that we just called "Party Dip." Cream cheese, dried beef, chopped black olives, a bunch of green onions, and Lea&Perrins (cuz I can't ever spell woster sauce right). Mix up and let sit in the ice box overnight for flavors to meld together. Excellent on toasted bagels, etc etc etc. I still keep a couple of jars of dried beef on hand at all times in case I get a hankering for it.

I’m so glad my mom didn’t experiment with dishes, dips & “salads” when I was a kid in the 60s & early 70s, although she did once follow a recipe she found in The NY Times called Applesauce Meatloaf. Since my dad liked it she made it again. To me, those 2 ingredients went together like liver & ice cream, & neither of which would I eat.🤢 Dylan, you’re terrific, thanks for making these videos!

As someone born in the late 60's, I am So Glad that this kind of "Cooking" has gone away. Though I do leave spray cheese on crackers, celery, or Fritos. So good on Fritos.

It hasn't truly gone away...just those of us that are the custodians of the evil books aren't willing to let them go back into the wild. I've a cookbook from Montgomery Ward that was to be paired with their new microwave ovens (in the 70s at least) that suggests microwaving shellfish...not shrimp, but goddamned *oysters and clams*. I don't want that to get out into the world where someone may think "Hey, I like shellfish and wanted to know if I could microwave it...lemme try!" (as a long-time cook, do NOT attempt to cook shellfish safely in the microwave...it doesn't work out at all).

A classic you should try is chipped beef on white toast. I used to eat this with my grandparents all the time. It's a depression-era meal that is actually excellent.

Growing up in the late 1900s 😂my parents had parties with this, spinach dip in a bread bowl cheese balls and whipped salmon dip. Was a sodium extravaganza for the adults.

I was born in ‘76 and I remember a different version of this. No spray cheese and green olives instead of black. Actually I made my version for a holiday party and it was a hit.
