Q: Didn't you previously have a pinned comment here about how you weren't going to post a FAQ because it was Thanksgiving? And then didn't you asked people how their turkey was coming? A: Yes, but it is now the day after Thanksgiving, so I'm going to attempt to answer some common questions. Q: Why are you recommending that I use a very dark chocolate bar? Can't I use milk chocolate if I don't like dark chocolate? A: Milk + dark chocolate = milk chocolate. Milk + milk chocolate = very milky chocolate, which maybe you'll like, but I suspect you'd think was kinda bland. Q: Do you realize that 70% cacao isn't "very dark" or "very intense" to me? A: Yes, and I'm so very impressed by you and the relative scale of your genitalia. Q: Is that a tiny whisk we saw you using to mix the gelatin with the water? A: Nope, it's handle of the measuring cup I used to pour the water in. Q: Why are so many of your videos sponsored by Squarespace? A: I assume because I generate a lot of sales for them, and because we like working with each other. But you'd have to ask them. Q: Could I use agave syrup or maple syrup instead of honey? A: Agave syrup, definitely. Maple syrup, I'm not sure about. I've read that maple syrup is not a fully inverted syrup, and an inverted syrup is useful to mix with the cane sugar because it makes it impossible for the syrup to form crystals and seize up into a sugar ball in the pan. But that's only a possibility, not a certainty, anyway. So, maple syrup would probably be fine. Q: Do you realize that you just revealed your street number to the world? A: Yes. I'm in the phone book. I'm a home owner. My address is an easily googleable matter of public record. To try to purge the internet of my address would be a futile exercise. The way that real celebrities keep their addresses off the internet is to employ infocsec firms to do it constantly. You're all on your honor to not show up and murder all of us.

Pro tip across several recipes: When pouring molten hot liquid sugar into a bowl while simultaneously using hand mixer to blend: *put a slightly damp kitchen towel under the bowl so it doesn't slide around*. Great recipes, thanks Adam!

Both ginger and peppermint (although I've never tried both at the same time) provide a nice fresh contrast, in my opinion. Maybe not the best if you're just trying to feel warm in the mid of winter, but if you're feeling a bit more experimental when making hot chocolate, try this.

I just made the honey marshmallows today and they were amazing it's always been a childhood dream of mine to have like so many marshmallows but we never got the good quality ones in India. These honey marshmallows were melt in the mouth delicious thanks very much Adam for this recipe!🤩

The best hot chocolate I ever had was at a coffee shop where they steamed/frothed the milk on the espresso machine wand, and then used Godiva chips in the mix. Creamy, velvet mouthfeel with a strong chocolate forward flavor, without being akin to a British drinking chocolate, which is a good but distinct drink.

Yeah, but we all know that the best way to experience marshmallows is put a jumbo one on a paper plate, put it in the microwave for 20 seconds, watch it become massive, then take it out and let it get all crispy and completely stuck to the plate. Then when you eat it, little strips of the paper plate come along for the ride too. It's magical.

I did this with my s/o a few weeks ago, marshmallows and all. It was great, and simple as long as you make sure you’re following the instructions lol. The marshmallows especially were fantastic, not as difficult to handle as I had expected. We used some fancy farmer’s market-type honey rather than the bear kind, and it still worked perfectly fine (honey is honey after all, bear or no). Thanks for sharing this with us :)

I can thank Adam for this discovery, but you know what I've found really helps with making hot chocolate like this? Sodium citrate. Turns out, it has the same effect emulsifying cocoa fat as it does cheese in a cheese sauce. You don't need a ton of it. A teaspoon for a four cup batch of milk does perfectly fine. But it makes it a lot more smooth and stable. And since I'm of the opinion that it's good to salt hot chocolate anyway, it doesn't even change the flavor.

For anyone screwing up making the marshmallow fluffy, by forgetting to heat it enough, you can put the hole mixed thing back in the pot and heat it up pull it up when its about to make a mess and put it back on repeat this 3 times and it will be fluffy and squishy again

I personally prefer to make a slurry with up to 1 tablespoon(usually a little less) corn starch. It creates a super thick, decadent hot chocolate I love. Wouldn't change anything else except I serve mine by pouring into a mug, throwing in half a handful of chocolate chips, and stirring very quickly. The goal is not to melt the chips into the hot chocolate, but to get them evenly mixed in while still solid so that they melt into pockets of chocolate that you get while drinking. It's awesome.

Very good recipe! Now here's mine: 330g milk 45/50g milk chocolate (I prefer the one with hazelnuts in it) 4g Dutch processed cocoa powder 7g sugar 1g vanilla extract Seriously, try adding chocolate with hazelnuts in it, it's just way better. It gives you a different texture, a nice crunch and great nutty flavour

Adam, first of all we salute you from Btown. Second, my wife made home made mel'meni. Usually I cook but she made these all by hand. We eat well every day so on Thanksgiving we usually have a salad. I've made marshmallows for decades. For holiday treats I make coffee marshmallows rolled in instant coffee and sugar, chocolate marshmallows rolled in cocoa powder, strawberry flavor rolled in Strawberry Quick powder. I cut them into large squares and place on chocolate candy papers and give as gifts.

I like the big marshmallows because it makes a nice layer marshmallow fluff that just barely mixes with the chocolate, same thing happens with the small ones but the novelty of a fat mallow in a mug is what makes it hot chocolate to me
