The best hot chocolate I ever had was at a coffee shop where they steamed/frothed the milk on the espresso machine wand, and then used Godiva chips in the mix. Creamy, velvet mouthfeel with a strong chocolate forward flavor, without being akin to a British drinking chocolate, which is a good but distinct drink.

Yeah, but we all know that the best way to experience marshmallows is put a jumbo one on a paper plate, put it in the microwave for 20 seconds, watch it become massive, then take it out and let it get all crispy and completely stuck to the plate. Then when you eat it, little strips of the paper plate come along for the ride too. It's magical.

I did this with my s/o a few weeks ago, marshmallows and all. It was great, and simple as long as you make sure you’re following the instructions lol. The marshmallows especially were fantastic, not as difficult to handle as I had expected. We used some fancy farmer’s market-type honey rather than the bear kind, and it still worked perfectly fine (honey is honey after all, bear or no). Thanks for sharing this with us :)

I can thank Adam for this discovery, but you know what I've found really helps with making hot chocolate like this? Sodium citrate. Turns out, it has the same effect emulsifying cocoa fat as it does cheese in a cheese sauce. You don't need a ton of it. A teaspoon for a four cup batch of milk does perfectly fine. But it makes it a lot more smooth and stable. And since I'm of the opinion that it's good to salt hot chocolate anyway, it doesn't even change the flavor.

I personally prefer to make a slurry with up to 1 tablespoon(usually a little less) corn starch. It creates a super thick, decadent hot chocolate I love. Wouldn't change anything else except I serve mine by pouring into a mug, throwing in half a handful of chocolate chips, and stirring very quickly. The goal is not to melt the chips into the hot chocolate, but to get them evenly mixed in while still solid so that they melt into pockets of chocolate that you get while drinking. It's awesome.

Now here's mine: 330g milk 45/50g milk chocolate (I prefer the one with hazelnuts in it) 4g Dutch processed cocoa powder 7g sugar 1g vanilla extract Seriously, try adding chocolate with hazelnuts in it, it's just way better. It gives you a different texture, a nice crunch and great nutty flavour

I've made marshmallows for decades. For holiday treats I make coffee marshmallows rolled in instant coffee and sugar, chocolate marshmallows rolled in cocoa powder, strawberry flavor rolled in Strawberry Quick powder. I cut them into large squares and place on chocolate candy papers and give as gifts.

I always put a pinch of espresso powder into my hot chocolate, doesn't make things taste like coffee, just intensifies the richness of the chocolate flavor

As long as you're not using instant powder you're doing it right. I remember reading all the bs in instant hot chocolate one time now all I need is unsweetened cocoa powder sugar and milk!

I like the big marshmallows because it makes a nice layer marshmallow fluff that just barely mixes with the chocolate, same thing happens with the small ones but the novelty of a fat mallow in a mug is what makes it hot chocolate to me
