thank you so much for the explanation. it makes so much sense when you broke down the time required to make it let alone the time spent on the road selling it. breaking down the time and the kitchen/storage etc. has made my decision clear cut. there frankly is no choice.

Thanks for the heads-up ... I'm from the east bay but now in Texas I been toying around with my wiener cart researching coney island recipes making them and it's really not cost effective unless you have your own brick and morter building with a full kitchen and your specialty is a coney island / chili dog stand . On a very small scale 1 lbs Chile brick 3 to 4 bucks you can spice it up and water to make it your own but on the flip side 1 lbs of ground beef / hamburg 6-8 bucks per lbs them all spices onions broth ect prep time cooking time frigerator space it really doesn't add up . I gave up on a scratch batch , note if your in California try out Dolores Chile brick 1 or 5 lbs add water beans if you like kick up the spices ect it your chili now .

Some canned chilli is better than most home made 😅 if those people only know the amount of restaurants that actually use pre made food like chili 😂

Most counties only allow ready to eat “non potentially hazardous” foods. Homemade chili is not allowed.

Way more cost effective to sell canned chili. My friends give me crap that don’t own their own business but my customers have never complained.

I take the leftover dogs from everyday running through a food processor and add it to the stagg chili

I get it from a local distributor, USFoods. I’m not sure where else it’s available, but it’s likely only from large food distributors. Another one I really like is Stagg! We use that when we have trouble finding this one.

You’re lucky your county and or state allows that. Some of us have no choice. My county only allows “non potentially hazardous food” (pre cooked before purchase).

what are you charging for a bowl of chili? How many 100 oz cans in each case that US Foods delivers to you?

Cases of 6, and we charge $5.99 for a bowl currently. The price is comparable to Stagg Chili.
