Hot Sauce Cured Egg Yolks

I’ve done salt cured egg yolks. They firm up and get gooey and delicious. So when I saw this alternative on TikTok and just had to give it a go. Next time I make them I'll let them go a bit longer and let them sit exposed in the fridge for a day just to make em firm enough to grate.

I have also seen yolks cured in soy sauce. Asian spice combos are limitless for umami bursts.

Well, part of it is that I use a lav mic that's taped under my shirt on by the buttons. So it picks up a lot! I also use a toaster oven.

Looks good - just stuck 3 yolks in some Franks Hot Sauce - a week in the fridge ?- if I take it out after 3/4 days will it be slightly runny ??
