Ingredients:
- 4 pieces of salmon with skin on
- 2 teaspoons sea salt
- 2 teaspoons brown sugar
- 1 teaspoon dried lemon myrtle
- 1 teaspoon black pepper
Method:
1. In a small bowl, mix together the sea salt, brown sugar, dried lemon myrtle, and black pepper.
2. Rub the mixture evenly over the salmon pieces.
3. Place the salmon in the refrigerator and let it rest for at least 2 hours, or preferably overnight.
4. Preheat the smoker to 105°C (225°F). I used a gas grill with some wood chips soaked in water for 20min.
5. When ready to smoke, place the salmon on a wooden board, skin side down. (The board makes it easier to handle the fish.)
6. Smoke the salmon for about an hour or until it reaches an internal temperature of 50°C (122°F).
7. Once done, remove the salmon from the smoker and let it cool for a few minutes.
8. Serve and enjoy!

That's very similar to the rub I use for mine but I also use a little old bay seasoning

WOW! I made this for dinner tonight with a medley of bbq grilled veggies. Despite being unable to find any lemon myrtle it was very tasty and extremely simple to do. I’m going to do hot smoked salmon regularly from now on. Thanks Andy!

You can buy various things you can use in your oven/stove for smoking. I've never used them, but it seems better than nothing.

I do something very similar with my charcoal grill! I have a tube that holds grill pellets so I can cold smoke or add extra smoke during grilling, I like to cold smoke the salmon for a few hours and then light a small fire to bring it up to temp :)

I do something similar but i use sherry vinegar to mix a thick marinate. It helps hold onto the smoke better

Would it taste the same with liquid smoke and sous vide to the right internal temp? Just curious. Also what about confit with talo or duck fat which adds fragrance from the fat to the salmon.

I love salmon. Your salmon is at least partially cooked as well as being smoked and I'm sure it is the "best."😋. Here in France we have access to smoked salmon from Alaska to Scotland but have not found one that's partially cooked. 🥴

It's cooked. If you buy it like this it would almost always be extremely dry and unpleasant to eat. Make it fresh, all you need is a BBQ and a cedar plank. Put it over the fire so that the board chars, take it off at 50 C internal and you'll have delicious hot smoked salmon.

@@louisaleroux5610 yeah, I'm from NL, it's very similar everywhere in Western Europe. But that cold smoked salmon they sell tends to be oversalted and not very tasty otherwise. So I make both my cold and hot smoked salmon whenever I can.

@@louisaleroux5610 Lox (and other smoked fish) was my very favorite breakfast food (I’ve lots of access in NYC), then I was restricted because of my blood pressure. I cooked with a fair amount of salt cod too. So very sad 😿 Now I’m limiting my fish to fresh fish choices. It’s not the same ..
