Mala means spicy & numbing flavor. Sichuan peppercorns is one of the main ingredients which makes the sauce numbing flavor.

I kept in the fridge up to 10 days before. If you wanna keep it longer like 2-3 months, freeze it.

All the bean paste using here are salty. Suggest to adjust it when mix with veggies or meat.

Those arent chili padi. Those r thai chillies or whatever they r . I can tell by the shiny skin & size. Cili padi doesnt get that big. Other than that no more complaint. Good recipe ! I'll be sure to try 'em out later .

Well... As I’m not so into chili, I just follow what indicated on the package. I might need to learn more about chili next time 😊. Btw, mala is one of my favorite even I can’t handle much spicy. Thanks for letting me know.

Yes, it is 😁 but you know you can adjust your level of spicy for homemade sauce. Use more large red chilli ( this is kind of less spicy chilli) for colour & less chilli paddi which is super hot 🌶️
