Hello St. Louis neighbor! (well, almost neighbors as I'm in the county). I've been watching some of your videos to get ideas because I love 川菜 and just today found out you were in this area. I've been making my own Sichuan food since there are so few decent restaurants here. I lived in China for over ten years and was lucky enough to have an ayi from Sichuan who taught me how to cook some Sichuan food. I love your recipes! I would love to see your version of 鸡丝凉面, I have tried making it many times and while I like the results, mine never quite seems the same as what I ate in China.

I’ll have to make some. I’m used to the hot pot where you cook it yourself at your table. Love hot pot. Do you have a recipe for cold noodles (leng mian) The ones I’ve had in Changsha were fantastic! I think I had them almost every day for lunch. Also the spicy noodle soup was phenomenal.

You'll love this dish if you like spicy food!! :) I made cold noodles in one of the older videos using chili oil! Feel free to check that out! It is more of a Sichuan style but it should be close to what you had in Changsha! :)

It depends on the hot pot base or the mala stir fry sauce you are using! Most store bought sauce should have plenty of salt but definitely try it out and add salt to your taste 😀

Typically the store bought base is salty enough! But you can always taste for salt ☺️

If i do cook this, i will add 1.5 tbs soya sauce, 1-1.5 tsp fish sauce 1 tsp sugar n salt for more taste.
