I love that we see the sous chef helping where he can. Chefs and sous chefs are really one of the last "master and apprentice" rolls that used to be more prevalent in day to day society. It's great to see someone eager to learn helping where they can.

Thats home cooking, the point of the exact ingredient is in this case to give heat and flavour. You can use whatever that can accomplish that. That's always a point with even more complicated recipes. You can experiment with already set recipes, but you should know what you are doing to the dish.

i'd be more curious to watch him cook it if he had a whole pile of left overs, kinda surprised me he didnt simmer the fish head in the broth for a little to try get some flavour into the broth out of the bone same with the tail. perhaps just leaving it sitting in the broth before eating gave enough. ill never know
