having broken down chickens for yakitori myself (I'm just an amateur learning), I was dying when I saw how he breaks down the chicken. when it did the neck I almost cried, it always takes me FOREVER, he just flies through and I'm sure with infinitely better results. a true master

Because it doesn't matter if you know what they do. You will not be able to replicate it. It's like Roubuchon, Jean George, Alsatian.. They all have cookbooks published with exact recipes. You can't replicate the restaurant level even if you tried

ATS has perfected his craft, just amazing! What they didn't show is the cleanup, ordering of chicken, spices, charcoal Etc... Don't forget about paying his bills to run his restaurant as well as payroll for his staff. He does all of this with only 37 minutes of sleep a day.

I made myself my own yakitori BBQ, and I couldn’t be prouder or more satisfied with the result …. but I run it with maple charcoal. This chef almost convinced me to order the bichotan charcoal, but I had to realize once more that this is out of my reach. You would not believe how expensive it is to get the stuff in Canada…
