On the season finale of the sandwich series I’m headed out on a journey to explore a sandwich that has recently been gaining popularity in Japan decades after it original creation in a 1990’s Japanese comic book. I’ll head out to 969 NYC Coffee in Jackson Heights to talk to a Japanese Chef who has been mastering the craft of the Onigirazu. Back in the kitchen studio, I’ve teamed up with GT’s to give you a quick beginners guide to drinking kombucha as well as show you how to make some Japanese style pickles by taking advantage of the acidic qualities and health benefits of kombucha. Then I’ll show you a great way to create vegan style “crispy nuggets” to create the perfect filling for my homemade Onigirazu. @GTskombucha

I love that you research the culture well! There is actually a traditional freez-dried tofu called Koya-dofu or Kori-dofu in Japan. I love them. Thanks for showing our food :)

I recently discovered onigirazu and it has been an amazing replacement for my children's lunch at school. They are more open-minded about variety even if in reality is still just a sandwich but it's with rice and seaweed.

Hey Man ! I tried cooking this at Home and it was really Amazing. I had another ingrediens but i stayed on a vegan onigirazu. I also cooked tofu nuggets but not the same way and i wanted to share it because it was really Delicious ! So I had in mind those Japaneses marinate chicken nuggets that calls kara-age and I wanted to do the same with tofu. So broke my tofu in nuggets and put them in a bowl. Added some soy sauce, rice vinegar, some mirin , sesame oil, garlic and ginger. Let marinated that during few hours. Then I took the tofu out ouf the marinade added flour to the marinade . Pour the paste on the tofu pieces, add some extra flour and fried it ! You all really need to try this it was absolutely delicious !

Hello! Thanks so much for this series! I'm a chef and I'm also vegan but I've really appreciated seeing all the different techniques and history behind all these sandwiches, and although I don't eat meat, it's still so helpful to learn about all these different ways of cooking and apply them to other things I'm making, especially if I'm trying to replicate a meat flavour or texture. I've loved the effort you put into these videos and how they've evolved over time, it really shows your passion for food and cooking and your serious next-levels of cooking intuition and skill. It was awesome for me to see the series end on a vegan sandwich because it really reflects the increasing popularity of veganism and shows you're in touch with your viewers. Can't wait to see what you do next! Also, having read some of the comments, you using the Premiere feature didn't bother me in slightest, in fact, it did get me excited that this video was coming out soon since I've loved this series. I didn't watch the video 'live' since it was at 2am UK time, but it was literally no inconvenience to me. - Sophie

Use apple cider vinegar when seasoning your sushi rice. It gives it a sweet, apple aroma along with a unique taste that just can't be compared to.

I'm vegan but I love watching your videos, especially the sandwich series, because I can always learn something new. I used that simmering broth with the 20 chinese spices to cook some home made seitan in and it turned out soooo delicious!

a quick tip for your rice if i may suggest ;) i know it's not a traditional way of doing it, but you can use a fork to "gently" mix the rice after you put the marinade on it. this way you don't put to much pressure on the rice and it doesn't get mushy. thank you for all your videos. i learned a lot from you and your brother!

A sandwich is not defined from having bread/wheat/gluten involved in the process, a sandwich is defined by the action of sandwiching one or more things between two other things, so long as it is portable, as is the function for which the sandwich as a food was designed. This is, absolutely a sandwich.

In Japanese, the word "to press" (like clench your hands) is "nigiru", and the pressed rice ball is "onigiri" because you shape the rice into your hands and press it lightly to form a triangular shape. "-azu" is grammatically opposite, so the negative form of the verb. So "onigirazu" is a little play on word because when you make this, the ingredients are similar to onigiri but you don't have to "press" the rice into a triangle.

Before anyone writes another comment about hating premieres you got to understand that this feature helps the creator build an audience and they watch the video with you and they are active in the chat and can help you with any questions. That being said you can always watch the same video after the premiere ends and even during the premier too.

Thank you! I was about to comment about this comment section being nothing but hate on premieres, but having it is helpful for everyone. Seriously, if you hate premiers, don't watch the video...or even comment, because it's not doing anything for anyone. I like them, I like having the option to be reminded when it's about to come on, and I like being apart of the community even if it's not a full video. This is no different than a creator doing a live video and interacting with the audience.

I explained why I don't like it in my post, if others don't choose to give specific reasons that's not super helpful but thats their own prerogative. If Brothers Green value the feedback that their audience is giving, as non-specific as it is, it's up to them to do more research to figure out what specific the concerns are and how to address them. Better someone says "I don't like X, unsub" than just unsubbing with no reason given.

It builds a bridge between creator and viewer, and that should be enough for those who enjoy cooking and want to share their experiences with like minded people and the people who inspired them.

The reason why it's called "onigirazu" is because "nigiri" in "onigiri" (and also nigiri sushi) means "grasp" (as in you grasp the rice in your hands to make them into balls). "Onigirazu" means something like "without grasping". So onigirazu = rice ball without having to make the rice into balls.

I've made this with my boys. Literally can put anything in it... sooo good. We have a different method of making it though. I put my sushi rice in a cookie sheet, lined with foil and cooking spray, while it's cooling down. This way I can make them in to squares and use a spatula. ;) I lay down the plastic wrap fist and then I offset the nori to make it a diamond. Place the sushi rice squares in the center. Then proceed with the filling and topped again with rice square. Fold in all the corners and use plastic wrap to hold it together.

You should absolutely try the Dutch 'broodje pindakaas'. A delicious sandwhich often eaten at lunch and whenever someone is eating it in proximity you wil always hear a 'gadverdamme, pindakaas meurt'. It trully shows the high of Dutch quisine.

If you made your own vinegar mix for the sushi, it would be improved. My Mom never used store bought sushi vinegar mix. She made great sushi. She added a little bit of ginger to the mix, let it sit and took it out. It added a nice subtle ginger flavor. I grew up making sushi.

I just started watching your channel and at first I had some reservations but after watching your bone broth video and now this I'm starting to really enjoy watching this wonderful channel. Four years ago I lost my sense of taste so I've been feeding my eyes through cooking channels like Marco Pierre White, Gordon Ramsey, Cooking With Dog, Career: Housewife, that one French chef channel that makes lovely ramen, and now yours along with many others I can't think of. You have a very complicated skill that you make us, the layman (or experienced chef), understand easily and the way you edit your videos makes everything come together like warm running water on a cold winter day. Thanks for allow me to live vicariously through your entertaining videos!

I'm sorry, I really hate the "Premiere" thing too... I actually almost forgot to watch this thing, because initially it wasn't available, and then it went out of my notifications. Then I randomly remembered it today when I got on KZbin. Having said that, I really LOVED this video series, and feel like the quality of the content went way up - with the research into the dish and interviews with experts. I really like the direction you guys are taking this channel.

Just hit the set reminder bell and you will be notified when it starts. Also when it premieres it'll be in your feed again. So you will get two reminders basically.

Pickled okra in that sandwich from the restaurant would work and still look pretty. I have to try and make this. Right now I have pickled asparagus I made this spring. Going to try it with that.

Oh my god, about a month ago I decided to go to 969 because I read about it as a hidden gem. I loved it I want to go back. I live not too far from jackson heights. Though I would say if you're a tourist don't go out of your way to come here because it is so tiny, not sure it's a destination restaurant.
