In Norway, we cook cheese whey at high enough temperatures for the sugars to caramelize. It's called brown cheese, but has more to do with caramel than cheese. And it's delicious :)

Worked at a pizza place and the Maillard reaction isn't the only thing that makes the cheese look more brown/orange, we actually sprinkle just a little bit of cheddar on top of the mozza because it makes it look nice, not necessarily for flavor.

My wife and I visited the Swedish moose dairy you mention when we visited the country last summer. We got to pet the moose, and watched an unintentionally hilarious documentary about them, but they were sadly completely sold out of the actual cheese.

Mozzarella is strange. Kinda tasteless when eaten alone but if you add aomething it like boosts its taste. Mozzarella, tomato, basil and olive oil and im in heaven. Oh god i need to make it now...

My grandma loved limburger cheese, kept it in a cold box on her porch. My sister pulled a prank in high school, putting something so disgusting on the hall heaters that school was suspended for two days. Pretty easy to figure out who had access to limburger cheese. Big trouble for my sister lol!

Man, back in high school I'd occasionally grate cheese, microwave it, then slice cheese from a brick and then dip it into the melted cheese. It was truly a wonder to behold. As an entirely unrelated thought, I really want cheese now

Until very recently, those "enzymes" all came from the stomachs of calves. It's fascinating on how that had to have been discovered accidentally in so many areas.

i think its the 'warmth' , as cold melted cheese doesn't really taste any better

At higher temperatures, the various molecules that contribute to flavor can evaporate and reach your chemical receptors more easily, resulting in a more intense flavor. There's also the comfort of warm food.

One of the more interesting cheeses, at least from a food perspective, is Skyr. Resembling Greek yoghurt and eaten for breakfast or lunch in Iceland it is a bit sour but usually sweetened with sugar and/or fruits or berries. It is theorised it became a popular dish in Iceland due to high demand for whey, which was, and still is to an extent, used as a preservation agent for various meat products. Whey was also widely drunk as a refreshing beverage but has become a lot less popular in the past few decades.

If you like consuming a pizza with just mozzarella on it, you should try different mixtures of cheeses with different cut styles (Fancy shred, diced, etc). One of my favorites for pizza is a 5 cheese blend that contains Mozzarella, Muenster, Havarti, and the other two I can't remember (sorry, it's been months since I got my hands on the mix and I can't find it anymore... except at that one place I worked, and I refuse to support that business after what happened). The different style of cut affects the rate at which the Maillard reactions occur. The smaller the individual pieces of cheese, the faster the reaction will occur. Also, the smaller cuts make it where you have the potential for a more even spread of the cheeses across the entire pie, making the eating experience that much more enjoyable.

+A P Hey, you at least have the option of lactose pills. Melted cheese makes me gag/vomit. The pizza on cheese is tolerable once it cools down to room temperature though.

Some pronunciation advice: when a scientific name ends in -i, you pronounce it "eye". If it ends in -ii, you use "ee-eye". So shermanii is "sher-man-ee-eye". Great video!

If you're using the correct Latin pronunciation for genus/species, *I* is NEVER pronounced as *EYE*. "Shermanii" is pronounced as "sher-man-ee-ee"

No you can't. There's no such thing as vegan cheese. "Vegan" and "cheese" are mutually exclusive. There's some weird entirely plant-based thing that vegans call "vegan cheese", but since it isn't made out of milk, it's not cheese.

The Chao coconut and peppercorn cheese is sooo very good. Doesn't taste like any other specific type, it just tastes good! And that's coming from someone who isn't vegan, I still buy the stuff whenever I find it. Have you tried the Myoko Kitchen stuff? Some of her flavors pretty darn good too but having to ship them across the country makes it too expensive, alas.

Shoutout to the "Golden" Guernsey dairy cow breed! They're known to produce more carotenoids in their milk than other breeds, sometimes to the point that their milk itself is a pale golden color! (They also happen to have "gold" and white spots, rather than black and white or red/maroon and white, which really adds to their nickname.) Milk from Guernseys can be more easily used to make naturally orange cheeses, making them a common choice for cheese specialized dairies.

Whey is also used to make the traditional Norwegian "brown cheese". The whey is boiled to remove excess water until it's think enough to solidify when cooled. Often a little bit of cream is added. It can be made from cow or goat milk or a mixture, the goat cheese has a much stronger and more distinct taste. I eat it every day. :-)

I love Norwegian brown goat cheese... Though you (any potential readers) might consider using a thin steel non-wire cheesecutter - steel because it´s tough to cut, thin because thick slices can be overwhelming x)

Handed crafted cheese is one of the most delicious things you can ever eat. Store bought cheese has no flavor in comparison. We have a farmer's market in the summer months here and the cheese made by the Amish is fantastic, they use milk from these Swiss cows and it taste amazing!

Annatto, for the record, does change the flavor of cheese. It was originally a flavor additive in cheddar, because it gives a slightly nutty flavor. The 'yellowing' is just a side-effect, though it's been assumed to be the main reason for some time.

jmcwd Any proof? There are tons of trans fats, saturated fats in cheese unlike vegan foods. Fruits, vegetabes, nuts, seeds, grains have been proven to reduce your risk of heart disease, cancer and diabtes. Cheese does not do what the plant foods do. And since we can get all our nutrients we need from plants, veganism is therefore, the healthiest diet to humans.

It's not bad. I didn't want to try it myself for years, but I did for whatever reason and I find it to be quite nice. Has a slight twang to it that's pleasing as a dressing (for wings) and it's soft and flavorful as crumbles (for salads). I say if you ever go out to eat somewhere and they offer blue cheese, request it on the side so you can try it out without having to be fully committed to the dish against your will.

It actually doesn't. Looks like a cheap badly bade pizza. Crust too thick and no black spots (thus obviously not made in a stone oven at proper temperatures). Once you've tried real Neapolitan pizza, you can't enjoy trash like that anymore.
