Are you sure it is formed by subduction? To me it seems like the Canary Island are formed like Hawaii. There is an active hotspot below La Palma. The other islands are slowly eroding and decreasing in height. I never heard about subduction on the westcoast of Africa. Hopefully you can respond to me. Also the explosivity can be explained by the local rifts in the earth crust. Sediment layers containing water gets in contact with the basaltic magma, making it less liquid and more explosive.

Amit, there is a third way to form volcanoes and that is over a mantle hotspot, similar to Hawaii. I think the Canary Islands may have formed from a mantle hot spot.
