You know those rare treasures that pop up occasionally in life? I was at an auction and a lot of about 20 pieces of copper came up. I was shocked that not one person placed a bid. This auction house has a policy to offer an item in a lot for $5 if no one bids on the whole thing, then the person that accepts can choose which piece and how many. I was the lucky winner and got the whole lot for $5 per piece. It's obviously someone's life collection and I'm so happy to have it. Some of the pieces are old and I hadn't researched if they were safe to use yet. Your info is perfect timing. Thank you so much. I'm going to inspect them more closely

Love love love copper pots & the patina💕 Growing up my mom used a half cut lemon, dipped the cut part in salt & cleaned up the pots that way. I found bar keepers & have been using it for years now... but have fond memories of the lemon wedge w salt. Thanks.

Because of you and Angela I have been drawn to and started collecting copper decorations from antique stores for my home. The one I brought home today was much shinier than the last one I purchased a few months ago… LITERALLY about 20 minutes ago I was searching “how to clean and care for copper” on KZbin. Thank you! I’ve been collecting copper pots for about a year now. I’m in NZ so they are prohibitively expensive and hard to find. So I’ve been getting them from Etsy. Funnily enough a set of five arrived just yesterday all sparkling and shiny from France. Only took a week to arrive from the other side of the world. I’ve been using them solely as kitchen decorations hanging. I’ll admit I’ve never used them for cooking but after watching this I now have the confidence to do so. I’ve been cleaning them with a paste made from table salt and white vinegar.

Thanks to you mentioning Rabbit Hill last year before Christmas I was able to make a purchase from them. I could only actually afford to buy their Black Garlic (1 gifted and one self gifted ☺) but one day I dream of buying a copper saute pan from them 😍 Until then I will continue to scour flee markets and garage sales. One day Shaye just wait I'll have as beautiful a collection to pass on to my own daughter with my collection of 4 generations old cast iron that I actually use daily. Or at least a mother can dream. . . Thank you Shaye endlessly for everything you've taught me, I've been subscribed to uou on my private account for years but with your inspiration as well as Jess @Roots&Refuge I started my own channel. Often I'll rewatch your videos and fondly remember the embrace of rain brewing in the air or snow soaked through my boots while in reality I roast alive under the 115+ temperatures out here in Death Valley. Nice video, very helpful! I just got my first copper piece, a roasting pan. I thought barkeepers friend was amazing on my stainless, but on copper, wow! Like magic! I loved your description of your relationship to your pots, I feel that way too. My carbon steel and cast iron I really feel connected to, but the stainless, not so much so. I love old things too and will definitely be adding some old copper pots to my tiny overstuffed kitchen! Thanks so much!

I recently tried cleaning my copper with a mix of white vinegar and a little salt and flour to make a paste. It worked a treat, I was amazed! If anyone doesn’t already have barkeepers friend on hand maybe you should try that mix!

Thank you Shaye! This is an excellent video teaching me everything I need to know about copper cooking pans. My grandfather was a chef with his own business. I grew up spending many hours in that kitchen- watching and learning. Sadly, his favorite cookware was heavy aluminum😱. Back in the 60s no one knew the dangers. Now we have this wonderful cookware to invest in. Thank you for introducing us to the Madein copper cookware.

I have a huge collection from Cat and Alain’s Rabbit Hill in France. I cannot say enough good things about not only the quality, but also how well packaged their pieces are when shipped. I’m in Canada and often get mine in 3 days from the time they ship. I’ve never had a bad experience over many many orders.

Yes, they are wonderful! I just received my latest box this morning :). No copper this time around, but I did get an antique bottle. I don't know how they figured out how to package things so well. I have yet to have a single problem.

You can also use wood ash to clean copper too. My grandma used ash back in the day. I have my grandma’s copper dutch oven. I would love to re-tin it. Thank you for the info

Salt and lemon/ vinegar mixture does the same cleaning and polishing copper pot and removes tarnish beautifully. No need to buy additional product.

Can anyone explain why tinned is better than pure copper? I thought tin isn’t the healthiest metal to cook with. It would seem pure copper or maybe even the stainless copper is healthier. What do you guys think?

Great video! To "clean" the outside, the eco and efficient way to do it is with just salt and lemon. The is a simple video about it from Ruffoni (here in Austria is the preferred way of doing it)

I didn't know about salt and vinegar. I had heard about using ketchup but I suppose it's the salt and vinegar in the ketchup. I will use it on what was very expensive Caphalon set. I think I paid 200.00 for just the large sauce pan back in the day. And that was on a store closing. Thanks.

Boy , I would never use a green scrubber on copper as it will scratch and ruin it , ask me how I know this > Also , Barkeeper's and Bon Ami should never be used straight from the can but make a very wet paste and rub with a tshirt cotton cloth very vigorously for as long as you can stand to do it . BUT , the best way to start from the beginning is to apply Vietnamese Chili Garlic paste by tapping your fingers up and down while app[lying it , never rub in any direction just straight up and down until it's all covered . It will almost instantaneously turn it pink . Then polish with the Barkeeper's as a wet paste and you can even polish precisely with the paste even thinner almost like white-colored water and it will really shine it without any fine scratch lines at all .

I found a set of copper pans at a thrift store with a French tag on them for a very cheap price! They are 100% copper but very vintage looking - they’re very old. I’d love them to be shiny but no matter how much I clean them. They become nice and pink, but not the bronze shiny color. I’d like it to be also I understand it is not safe to cook in them so why were they made like this? Just curious wonder if someone knows thank you.

It seems like the Barkeeper’s Friend would be too abrasive, wearing the copper off over time. What about using baking soda instead? I especially wouldn’t use the green scrubber, it’s very abrasive.

Guys, I just have to share this exciting information!!!! So, a few weeks ago, I heard in my spirit, The Days of Refreshing! I questioned it because of all the darkness that surrounds us, but I got confirmation from the Lord that it was true. I am so glad I watched this! I thought that once the tin darkened, it needed redoing, but now I know better. I. went back and looked at all my copper pots and they are ALL usable! I have several from France with markings on them, but some I had just used for decoration. They are all so beautiful!

Would you consider getting rid of your dishwasher since you all hand wash dishes? We are a large family of 7 and we pulled out our dishwasher a couple of years ago and its been a great change for us. Hand washing is not a big deal for us and its nice to have the extra space in our kitchen without the dishwasher.

Bar Keeper's Friend is the best! I have an excellent set of Chasseur Escoffier pots and pans, and they have been beautifully maintained for years with BKF. Like yourself, I don't use it all the time. But it's an enjoyable process when I do. Make sure you wear gloves though as BKF can cause eczema on the hands if you use it frequently. BKF also removes minor scratches in the exterior of the pan from being moved around the hot plate. Combined with a microcloth designed to clean stainless steel (BKF sell one) it does the trick for keeping them beautiful for your kitchen. Make sure you dry the exterior immediately before putting them away, as water will lead to tarnishing. It might seem like a hassle, if you're used to simply chucking your cookware in a dishwashing and walking away. But nothing beats cooking with a quality set of pots and pans. So it's worth taking the extra time.

Tim usually lasts awhile. When re-tinning it can be pricey. But the tin lasts well over a decade and longer. It’s definitely worth sending to an expert like East Coast Tinning. It’s worth the expense.

I have used copper bottomed stainless all my life and shyed away from tin because I don't know how to clean it. Great video but ended it too soon! How do you clean the tin interior? When I see one in a store I pass over it because of the dark "unclean" interior!

I never knew I could actually use old copper cookware until I watched this video last night, I was definitely one of the people that just assumed it wasn't safe (no idea why I thought this). Today we went antiquing and I found a small saucepan, I was so excited! I brought it home, gave it some love, and now I am trying to figure out what to make in it first. Couldn't find Bar Keeper's Friend so I used ketchup, it worked well enough for now. Thanks for the wonderful video!

Kleen King works much better than Bar Keeper's Friend. Kleen King is also not as abrasive and it works very quickly to restore copper to its original shine. Kleen King is not a polish and if you do use it on copper that has been polished with a buffing wheel, the copper will end up with slightly satin matt finish--it still shines and reflects but is not the finish that comes with polishing with a buffing wheel. New copper pans are polished on a buffing wheel, but it is impossible to maintain that kind of finish unless you use a polish and probably a buffing wheel as well. Also, the bottom of copper pans will end up getting scratches from the cook top grill grates, there's no way to prevent that. With the satin finish that Kleen King gives, any scratches or marks from the stove will not be noticeable. If you look at any of the old "Great Chefs" cooking shows from France, you'll notice that all the copper pans in real French kitchens have a satin matt finish--the only copper pans that are polished are on the walls for decorations. Try Kleen King you'll really like it. I use it on all of my copper French pans. You can find Kleen King on Amazon, too.

As an additional note. When you are researching copper brands you will see people comparing thicknesses of copper. Thicker is not necessarily better. If the copper is hammered it does not have to be as thick. Bending the copper causes work hardening (or strain hardening) because working or straining the copper introduces defects, known as dislocations, into the structure. These defects interfere with further deformation, making the copper harder and stronger, thus making it more difficult to bend further.

Both are wonderful for different applications. Copper cools down faster so it’s better for more delicate cooking and certain recipes. Copper is wonderful for making candy, jam, certain grains. Amazing for baking when you want a carmelizes crust like a canele.

Can you cook with acids like citrus , vinegar, and tomatoes? I know cleaning with brasso or bar keepers friend is good or citrus and salt but do you have a preference for how to clean the copper ? What about when it looses its luster ? Is there a good at home buffer/ polisher to use or do you have to take it to get maintenance?

I have stainless steel with copper bottoms. Love my stainless steel because it's totally food safe and easy to maintain but the copper bottoms are better at conducting heat than steel. Best of both worlds!

I have a large copper collection and have found every piece on Marketplace or at my local thrift store. I can't justify spending that kind of money on copper pots and pans. These are difficult times for a lot of people ...I say keep looking on Marketplace or your local thrift stores ...sometimes they have never been used! ...and I love Bar Keepers Friend for copper cleaning!! The best and cheap as chips!
