“It may seem a little fussy.” One of my 4 girls is actually allergic to corn and so many derivatives. Marshmallows is one of those things that are nearly impossible to find without corn syrup, citric acid, or made in a corn contaminated factory. We have had to go with out most treats in fact. Any recipe that helps her feel like a normal kid is a recipe that is MUCH appreciated. Thank you from the Wilson family in WA! 🙏🏼💕

I have made them using light corn syrup from Alton Brown's recipe. I never thought about using honey. Around Christmas I will add peppermint extract and crushed peppermints to the mix before putting them into a tray for cooling.

I JUST did this with the kids I nanny!!! Didn't use honey, but we skipped the corn syrup and made them pink with beet powder and they LOVED them!

Did you just use sugar and water? I am not a huge fan of honey flavor outside of it being on a buttered biscuit so I was wondering if I could just use a cup of granular sugar.

I’ve been making homemade marshmallows for years but since we cut corn syrup out of our house I haven’t been able to make them! Thank you for showing me we can use the raw honey from our farm instead, you’re a life saver!!!

How fun! Would be interesting to have a Part 2: 'add ins'... such as I see down below...peppermint for Christmas... using earl grey tea... etc.....Would greasing the mixing bowl (and maybe the measuring cup too!) help with getting all the ingredients out? I used chai tea instead of water one time and then dusted the finished marshmallows in powdered sugar mixed with cinnamon and they were amazing!

They look so lovely! I think with the powdered sugar they'd be a bit to sweet for me though. I've been making your old homemade marshmallow recipe that just uses honey for years and they are so good! The only topping for hot coco :)

I've made homemade marshmallows a few times and they taste so much better than store bought. I've never seen a recipe with powdered sugar before. I love how there are usually different variations of the same kinds of food 😊

Looks like the powdered sugar is from Azure Standard. Good to know it's available there - what I've been doing is putting organic cane sugar in a blender and powdering it that way. ;)

@@DansonforJoy that’s what I do, and organic brown sugar is kinda pricey so I make my own by blending organic cane sugar and organic molasses to desired color.

I adore homemade marshmallows. I use regular graduated sugar and boil to soft-ball stage. But I’m definitely going to try substituting some of honey next time. They flavor it must lend to such simple flavors the marshmallow has.

Do they roast/melt/catch fire over a fire like the store bought stuff? We love lighting roasting them over a campfire, but to be honest, we mostly like them to catch fire and eat that crispy layer formed. Do these do that too?

In my experience, then don’t toast and catch fire like store bought. I like them, but they melt very quickly. Not great for s’mores even if you’re just heating the marshmallow in the microwave (not that I’d do that…shhhh).

Great recipe! FYI it sounds like your mixer needs adjusting, the whisk is hitting the bowl, there is a screw on the inside stand you can adjust.

For your next chicken rodeo (because there is always a chicken rodeo in your future if you own chickens) you should get ahold of a thing called a rooster hook. It’s a long pile with a little hook at the end and it is perfect for snatching naughty chickens by the legs. Also yay for honey marshmallows!

I wonder if you added the butter to the marshmallow mixture while it was still hot and then mixed in your cereal and let it all set up together if that would work well. Definitely worth trying.

Yum! Do you have a preferred brand of gelatin? Is that powdered sugar in a PAPER bag? I’ve been trying so hard to ditch the plastic packaging but, sometimes its tough to find items in paper or metal. Would love to see full on re-fill stores pop up here in Wa state like they have in parts of UK.

I daughter has the strangest allergy to pre packaged whip cream in the tub and marshmallows in the bags. She reacts the same to both. Yet I can make her whip cream from whipping cream and she's fine. So I wonder if homemade marshmallows would be okay too.

Depending on my audience, I swap out the honey for maple syrup or molasses - they are even more popular than the honey!!!
