I don't think you know what you're talking about. Letters do not necessarily correspond to their pronunciation, and that's what makes the spelling bee difficult. Merriam-Webster says the pronunciation of "incunabula" is in-​kyə-​ˈna-​byə-​lə. Notice the schwa: this sound can be produced by numerous combinations of letters in the English language, and when properly pronounced those combinations cannot be distinguished by sound alone. Suggesting that the judge place unnatural emphasis to suggest how the word is spelled defeats the purpose of the spelling bee. If the judge were to do that they would in fact be in error.

The real pronunciation of the word in Latin is "IN - COO - NAH - BOO - LAH", and not "in-ka-naeh-byoo-lah". Anyway, since we don't live in the Roman Empire anymore, and being both the speaker and the girl American, it is fine to pronounce Latin words according to the English phonetics rules. The word is obviously Latin, but it has been correctly anglicized. This event took place in the USA, therefore it's correct and fair that Americans pronounce it according to their phonetics. We Italians do the same with English words that have made their way into the Italian vocabulary, such as "Computer" or "Sport", pronouncing them the Italian way, with a strong rolled -R-, and a deep vocalization of vowels.
