Mandolin 🤣 Your insight and self-awareness is brilliant to see. I have no doubt that if you continue on this trajectory, that you'll have your own 3 stars eventually. I'd say you've hit onto a wisdom that applies much more broadly than you explicate here; what you describe about the chef from the bear, vs a 'good chef' is really what makes a good leader. Being a good leader and having the skills in a kitchen to back it up is what makes a truly successful kitchen. The other side of that coin is curiosity, which you seem to have in abundance. Curiosity at how the world works, asking 'why' and then deciding for yourself if you agree with the hypothesis and purported result. As always, thank you for sharing! I look forward to your future videos :)

I have a special place in my heart for Michelin, it genuinely taught me things I put into practice every day (even if not related to cooking). Sadly not the direction I wanted my career to follow, I realised starred kitchens out there were nothing like the Michelin I was trained in. I share many of the views with the ones in this video, I really think hospitality is something everyone should go through. Unfortunately many chefs need to go outside, touch some grass, and realise that if you are working for them, you are there willingly to help achieve a goal you believe in. There is no mistake or good enough excuse to justify mistreating a colleague that’s working hard and trying their best every day.

Man, I*m in my third stage this year and my first ever Michelin starred Kitchen. This shit is rough. Nothing I do seems to be "good enough", people dont talk to each other outside of the service and everyone is always fucking frowning. On my first day i come in to somebody getting fired. On day 2 i try making a joke and get yelled at for like 5 minutes...on day 3 I watch some 16 year old being screamed at by two grown men for (i kid you not) 20-30 minutes... Like wtf... I'm going back to bistro kitchens hahah
