Feni is a rare liquor made from cashew fruit, and it's produced only in Goa, India. While some brands are pushing to take feni to the mainstream, this family has survived by hand making small batches and selling locally.
The Gaonkar family only sells the liquor locally and does not have a website.

I know that people like to pretend it’s just Americans who are abit grossed out by lower hygiene standards but I guarantee you that other countries don’t find this appealing food safety practices.

This has a GI index. Pure feni is found in local bars. The first distillation is Urrak which has a more fruity palette, and is a seasonal drink having a short shelf life. Typically enjoyed during summer. Feni gets better in time. Can be consumed at any time of the year. Proud to be a Goan!!

​@@namedrop721 Urrak is usually stored or bought in plastic bottles because it's not commercially produced like Fenny. You can keep it in glass bottle and refrigerate for a slightly longer shelf life. I think the shorter shelf life is because it's very fruity. I prefer Urrak to Feny.

I lived in Goa for 4 years. Hated feni at first, it's a very acquired taste, but now I love it especially served with Limca, half a green chilli and a little pudina (mint). Still visit 3-4 times a year and always bring back a local-made feni, usually sold in a repurposed Bisleri water bottle. You know it's the good stuff.

You're wrong, Yes it might be bacteria free but not toxin free Distillation work based on evaporation, the problem is bacteria secretion also in form of liquid, it also evaporate along with alcohol

@@kosakata8632 During the act of fermentation to produce alcohol the environment produced by the yeasts has low oxygen and kills of many bad bacteria and cultivates good kinds. Fermentation is one of the worlds oldest food preparation and preservation techniques. Of course things can still go wrong and I'm sure bad batches happen but there are easily identifiable from the hundreds if not thousands of batches they make with their hundreds of years of experience that has been passed down. Plus with any distillation there are there are toxins and unpleasant compounds that come over at the first stages but thats why the heads are thrown out and normally the hearts and tails are collected.

I came across this video and I am from Goa. My family is still producing Cashew feni and urak in Goa but only for our family and relatives consumption. Moat of the Cashew apples comes from neighbouring states like karnataka and Maharashtra. We used to drink Cashew urak and feni the day you are born and the day you die. For the weddings in Goa it was a must and for every feasts and festivals in Goa.

It would've been done with more cleanliness in Italy as well Edit: A lot of people are getting caught up on "clean vs. unclean". Whether it's Italian or Indian liquor, it is clean after distillation. However, the cost of production (cleanliness, time, availability, can all be a factor) before-hand will add to the cost. When there is more care in a product before-hand, there is an additional cost. Think of free-range chicken or A5 Wagyu beef. The care before the product reaches it's final form adds to the cost. Lastly, a lot of Italian wines have been aged for many years which adds to the cost. This Indian wine is not aged nearly as long as artisan Italian wines.

@@user-kd4mi8xb7pif you understand the fundamentals of chemistry and micro biology you would realize the manner in which it is prepared is absolutely necessary for its taste and alcohol potency. Just research the process of fermentation as it relates to bacteria. In Italy machines would do all that, with additives and it would be stupidly overprice🤷‍♂️ just saying.

@@senioritaexoticaI hope you learn the "how much is enough " part of the Hygiene chapter in your schools , Indians naturally have a higher tolerance for food quality anatomically, but I do think the case presented here in the video is good enough since it's distilled 2 times and also microorganisms cannot survive that high of alcohol level . We rarely get sick from food we eat here .

Anyone who's feeling icky about the stomping process should know that cashew fruit/nut has corrosive oils in them which are used for waterproofing boats etc., and thus using bare feet to stomp out the juice is not an option and machines get corroded easily which is not feasible for these small handcrafting families(maintenance cost will get higher than revenue). The alcohol is distilled anyways so it's clean.

My grandma has few cashew trees around her house and when she roasted the nuts she would apply coconut oil on her hands before handling the cashews otherwise the oil from cashew could cause your skin to peel off horribly

I love that folks have found their niche product. Id love to try it one day but living thousands of kilometers away I'm probably out of luck. I think the only thing I would question is their practice of taking the first distillate and adding it back to the still. In every other distillation process I've seen the first (and last) distillates are usually where you get most of the unwanted gunk, water and any unwanted alcohols that you don't want in your drink. That said, most of the processes I'm familiar with involve corn or grains, so using fruit its possible this isnt an issue (similar to making wine making)

This process is a lot less scary once you realize that the only ingredients that make it into the final product must be heated to over 170 F. If they sold the undistilled fruit "beer" it would probably be dangerous to drink.

The final product was distilled twice so people don't have to worry about it being unhygienic. The same method is applied to the old way of making wines in the West.

This is actually very sustainable. Usually the cashew apples are discarded after removing the cashew nuts and that would go to the landfills. Here its turned into alcohol, cattle feed and eventually manure for the plants.

landfills? clearly you are not a farmer or gardener. :'D nobody is taking fruit waste from a farm to a landfill. that stuff is composted on site or just spread out back under the trees where it would naturally fall and rot. sending it to a landfill would cost money and deprive the field of more nutrients unnecessarily. of course making spirit from it instead can be profitable. I hear cocoa fruit pulp is also sometimes used to make alcohol, though I'm not sure if it gets distilled. if such fruit waste can be made into enjoyable spirits rather than lower potency wines, that makes it more marketable due to its long shelf-life.

Anyone who says about using their feet must understand that they undergo distillation to evaporate the alcohol and separate it from the mixture which is free of dirt and impurities.. They do it twice.. !!!

I see a lot of people don't know what distilling means, and therefore think that the end product is unclean. Distilling is where a substance is boiled in a pot, the condensation (steam that would normally go into the air, but is instead caught at the top of the pot) will trickle down through a pipe which leads to a container, this process seperates the gnarly stuff (dirt, bugs and bacteria to name a few) from the liquid. They do this process a few times to make sure the end product is as clean as possible.

Um, it's not just where it is made, it is if it has a good reputation and high interest among people. Though I think there are better products than alcohol to sell for the benefit of everone regardless of where it is made.

@@kanaler5924 Well it actually is dependant alot of where stuff is produced, or more accurately the people controlling the region where is is produced, or also the trade agreements the area has with the rest of the world. Because of the area it is produced it is counted as "country liquor" as described in the video, and just because of that definition that mainly comes from it being produced in the country side of India people already have a bias towards its. Compare it to tequila or any other type of spirit that is widely popular, which became popular when the Spanish started consuming it in south America and trading it back to Spain.

My aunty's mother who died couple of years used to make cashew fenny. Not just Goa, Mangalore too has a lot of cashew trees but very few people know to make Cashew Fenny. We had a few cashew trees in our house. Cashew fruit tastes great but is also very acidic. Can literally burn your hands. Toddy that they mentioned however is made by a lot of folks.

I remember my boss from India brought this to a party once. He brought it in a water bottle which seemed strange but he explained that he basically had to smuggle it out. We tried it (he also brought strawberries, you take a shot and eat a strawberry. Tasted incredible and we all got super hammered. Almost no hangover whatsoever. Wish I was able to get my hands on the real stuff again.

That would require these beverages to be exported, which wouldn't work well. But it is possible to ship the fruits to the location, make it there, add preservatives, and then hand them over. But that would only work if the bussiness was booming and they actually _could_ export it.

When he dries the tuba under the heat of the sun, the tuba will become a sour vinegar. His children finished their studies because of his tuba. He once said that he will ne proud as a tuba maker.

Fermentation period is 3 days. In Kerala, making feny is unlawful and punishable. So hundreds of tons of cashew apples go waste every year, though, manyvpeoples make the liquor secretly.

Guys, this shit is twice distilled, any particles are left behind, the vapor cools and turns to liquid. Vapors don’t carry dirt. It’s perfectly clean and safe.

When I was a kid my classmate will sell cashew nuts for 10 pesos. He will just pick cashews and roast it for few mins put in a cellophane then sell it. When you buy them in supermarkets they cost hundreds. Expensive much.

The funniest thing is that there is a brewery here that leaves their brew over wild berries and allow wild bacteria and yeast to ferment it and they charge 12 for 6 pack, and top shelf rum use dunder pits and charger 50-60 for 750ml bottle

the saddest thing about this is the woman saying they can make 300 rupees a day. That’s £2.90 approx. I spend that in the shop on my way to work without a thought yet these people are knocking there self to bits for pennies and that’s for a whole day. @@JesusGodHolySpirit3 i have one word for ya. Distilation. Also it's the traditional way wine is made. In many places in the world its still made like this and it is insanely expensive. Also if the alcohol is potent enough it can litteraly kill bacteria. how is that dirty i have no idea.

The comments didn't disappoint about people freaking out about the boots used to mash it up. Tons of foods start off in a less than appetizing manner but it's the end product that matters because it's purified and/or refined to make sure it's clean. Besides, ethanol is a pretty darn good antiseptic. Cheers! 🍻

@Po Nomo The copper thing, is a Stil a named dirived from the function it serves, Distilation...it does this through boiling the liquid until it vaporizes then passes it through a cooling tube where it cooled, the resulting liquid is very much "purified" by means of the production process..Try watching one of NileRed's videos if you are still confused.

As a Goan I would like to tell the boots which they used were dirty I agree but that's the way they earn they can't afford to get machinery and if they don't make this feni it would be dead And they know about hygiene First it gets filtered to remove impurities Then it's heated which means all the bacteria and microbes are cleaned Then they distilled it 2 times and that vapourise n separate that’s what it is.. it turns to be 100 pure and safe As an example . The water that cms from rain it's the same water evaporated from gutters. Pond , muddy water and all the thing containing concentrations of water once that get evaporated and it get condensed it gives rain n that's clean it's the same with feni~🙂

It’s unfortunate that this traditional drink is facing such uncertain times. I feel for this family who are struggling to maintain and keep this delicious drink alive and fresh in the minds for those who still cherish and value what this is all about. I used to enjoy a sip or two as a child and when I visited Goa last I definitely made it a point to savour the drink at every meal The resort suggested I try Feni and Limca - which I did and it was great. More power to those who believe in the old traditional ways even though an uphill struggle trying to keep it sustainable and yet enjoyable for those who value it…cheers to this traditional Goan drink !
