Not sure if this is your first time trying this, but the invisible sniper that was giving you trouble is literally just a super powerful bullet that is shot from your camera. If you ever pay attention to the bullets that come from the sniper, it always faces whatever direction your camera is facing. The only thing you can do to prevent yourself from dying to it is by blocking the bullets from hitting you with something. If you ever feel like attempting this again, one of the best things you can use to do this is by taking a covered wagon, but you can also kill a large animal that Arthur will carry on his shoulder and haul that across New Austin on foot, though that method is very slow. The important part is that you do not move the camera to look at Arthur. He must always stay hidden from the camera or the sniper bullet will hit him, killing him in one shot.
