In Auckland, NZ, The Kai Ika Project was created to utilize fish heads, frames and offal which were previously going to waste. Since September 2016, previously discarded fish parts have been collected from the Outboard Boating Club by Papatūānuku Kōkiri Marae whanau and redistributed to families and community groups in South Auckland who value these fish parts and can make healthy, nutrient-rich meals out of them.

it's kind of amazing how rich countries make a special feature of cooking fish heads. meanwhile here in South East Asia, throwing fish head is such a wasteful thing to do 🙂 You do not throw fish head, you cook it together.

I’m Asian and from Auckland. In the 90s, my mum could get fish heads, fish bones, fish roe (from fishmongers), ox tails, offals (from butchers) for free or next to nothing. Often they used to give us extras coz kiwi vendors didn’t know what to do with them. It’s good to see that now pakeha and other NZers are appreciating these “offcuts”, and realise that they can be used for creating beautiful and tasty dishes!

My missus is from Thailand. She taught my kids (6/8/10) in the UK to eat fish brain and eyes LOL. Restaurant in Spain ordered monkfish. The waiter was absolutely delighted when she cut off its head and ate it. In the UK it was standard to eat tongue, cheeks, oxtail, intestine - most of the animal. Nowadays it's all binned and no one eats it. These guys are doing a great job.

My family is from SE asia. Been eating the head since we was kids, with my parents cooking. We don't waste anything on any animals. With fish, we use the bones and head for a soup stock, it is delicious. And, the head had a lot of fatty meats.

When my friend from Singapore went to Britain years ago to do his degree, he sometimes cook. He would sometimes buy chicken livers and gizzards for his dog but he don't have a dog.

It's happening in my place where I live too. The market near my house sell the salmon head with 50% discount and almost nobody still don't want to buy it except me, the seller even always remember to sell it to me every time I come to there. It's sad not many people know the value of the nutrition inside fish head but hey one man trash is a treasure for me 🤣

In Maldives we always eat fish heads, because it has lots of benefits for eyes, brains, to body, fish head have omega 3 fatty acid, protein and nutrients. We eat tuna, skipjack white fish heads like grouper, snapper, trigger fish, Parrot fish ete.

Watching this made me proud to be a kiwi. My Dad is Maori and My Mum is Samoan. I was raised in Australia..The head of any fish was always given to the most important person at the table. My dad loves his fish heads. To see 90 % yield on a fish is Awsome! Nothing should be wasted. To see healthy food that was once wasted turned into food for those in need is inspiring.

In my home in India, we use the fish for gravy and we fry the other parts of the fish. We also use some of the other part in the gravy as well.

Vary cool! I will never forget the first time after fishing .while i was at the filet station, someone asked me for my salmon fish heads and bodies. I asked why and they said for soup. I said as long as i can eat with you let's do this! It was amazing and 20 years later i still use there recipe!

I grew up eating broth made of fish head and bones. We had bad times in my family but my dad never left us hungry. Even though he is of nomadic background he would go to the fish market after a hard day's work and buy couple of heads mainly tuna, shark and snabbers and he would make this crazy soup. It was the best.

I totally agree with using the fish whole. The fish heads are the best. Cook them in curry to make curry fish heads. The fish bones make great stock for a variety of cooking recipes. Trying steaming the whole fish with ginger and shallots with a tough of cooking wine and soy. Yum.😂

I'm black from Florida and I have sold fish since childhood. When I sell big fish like grouper (10 - 60 lbs), most people only want the fillets, so I save the backbones (they say frames lol) and the breasts (they say wings lol) and am careful to get the cheeks and other head meat. I end up with about 8- 10 meals worth of fish from one 20 lb fish.....plus the fillets get sold. I've made head soup but not often. It's a bit more time consuming.

This reminds me of an episode of One Piece and Sanji had a cooking battle with a chef from the Marines and the winner was decided by which dish the Marines loved the most. The Marine chef used only the best parts of the fish and threw away all the bones and heads and scraps of veges too. Then after she finished, Sanji grabbed all the scraps that she threw out and made a fish ball type dish with a sauce/stock made from the rest of the scraps.

Bruh . Just boil some water with tomato, onion, and ginger. After the tomato dissolves, add the heads and some talbos kamote. Wait until the fish meat whitens then add some tamarind. Done!

In Vietnam, fish heads are often cooked in a sweet and sour soup with tomatoes, dills and pickled mustard greens. Growing up it’s my favourite dish in summertime. Fish’s frames often get deep fried, became very crispy and a delicious snacks. Vietnamese culinary often use most of the parts of the animal during the cooking process, very little is disposed of, when I first moved to New Zealand, I actually struggled to find animal parts that are popular in Vietnamese cuisine like fish heads, pig tails/ears. So good to see these communities keeping up the good work to sustainably preserve our natural resources!

Fish head is a delicacy in Bengal. We used to make lots of tasty recipes with this heads. Example: Murighonto (Fish head curry), Macher er mathar dal (Lentils cooked with vegetables and fish heads), Macher mathar tok (An appetizer) etc

Love this initiative. Also pleased they've started selling smoked salmon tails and fins in the supermarkets. Much cheaper than the body, still heaps of flesh on them and they actually look great on an antipasto platter. Win, win, win.

A long standing practice of many countries worldwide eating every part of the fish.Same with eating sheep & cattle offal the kidneys, liver, tongues, tripe etc.Some countries eat sheep and cattle heads.Kai time on the road' was awesome showing the many food practices of local towns who hunted their own food on land & sea & grew their own veggies.

Love seeing this, in Bengali style cooking we try to utilize the whole fish, so often you'll see the whole head of the curry. My father also thought me to suck the marrow from the bones, since we cook with bone on. This should also be done for meats, I see a lot of the time, tripe is thrown out from beef and lamb, which is a great source of protein, a slow cooked spicy curry does it wonders (gets rid of the smell). Meat head should also not be wasted as it has a good amount of meat on it, and the brain contains good amount of omega 3 and protein, The latter include phosphatidylcholine and phosphatidylserine, which are good for the nervous system. The antioxidants obtained by eating brain meat are also helpful in protecting the human brain and spinal cord from damage.

In the Indian peninsula as well...we don't fillet our fish at all, because of it being wasteful. The only things that gets removed are the guts, scales, fins and gills. Everything else is either cut up and put into a curry with the bones, or fry it or steam it. Even the bones of fried small fishes are chewed out. Fish heads, eyes, the brain and even the spinal cord of the fishes are eaten. And only the skin of certain fishes like tuna are removed. There is even a kind of preparation for the intestines...but most people discard them

thats good. Some resturants overseas cook and sell the fish head. Its my favourite part of the fish.....I alway buy whole snappers fillet them and the first this I eat is the head bones. The rest I make ceviche.

If you deep fried the bone and heads. Then blend then boil with some ginger, ,white pepper, cooking rice alcohol and scallion for ~30 min n fine strainer then you have a white fish broth you can use for noodle or hotpot . ;)

I'm northern west coast of north America and some Fishman cheek the big salmon allmost tastes like a scallops.. then I use the rest scraps for crabbing then they go back in to ocean after too continue the circle of life

The best tastiest part of the fish is the head. A sour broth with tomatos and ginger, onion and leek, good for hangover, is my favorite.

In borneo... Fish head is tag with high price... Fish heah curry, asam pedas or asam kunyit are most common menu in restaurants here... Do find borneo cooking for fish head... For sure you will like to watch... Not to mention the fish gut... Certain fish gut also sale in high price tag... Either for medicine or gourment...

Similarly in Asia, all parts of the fish is used except the guts and gills. Bones make good soup too.
